Abstract
Kota Malang adalah salah satu daerah tujuan wisata utama di Jawa Timur. Wisatawan Kota Malang yang terus meningkat tentunya akan meningkatkan permintaan kebutuhan pada sektor transportasi, penginapan, dan sektor industri pangan. Diantara ketiga sektor tersebut, sektor industri pangan menjadi yang paling utama karena wisatawan pasti membeli makanan di tempattempat wisata baik untuk dikonsumsi langsung atau dijadikan oleh-oleh. Salah satu oleh-oleh khas Kota Malang yaitu keripik tempe. Keripik tempe di Kota Malang diproduksi oleh beberapa Usaha Kecil yang berpusat di daerah Sanan. Salah satu produsen Usaha Kecil Keripik Tempe di daerah Sanan adalah Usaha Kecil Sari Rasa. Meskipun produksinya banyak tetapi profit Usaha Kecil ini tidak stabil, penyebabnya adalah hasil produksi dari Usaha Kecil ini naik turun setiap bulannya. Oleh karena itu, agar hasil produksi dan profitnya stabil perlu dilakukan analisis produktivitas sehingga dapat diketahui tingkat produktivitas setiap bulannya selama periode pengukuran serta faktor-faktor yang mempengaruhi tingkat produktivitas tersebut. Penelitian ini bertujuan untuk menentukan produktivitas dan faktor-faktor yang mempengaruhi produktivitas, serta memberikan usulan perbaikan untuk meningkatkan produktivitas di Usaha Kecil Sari Rasa di masa yang akan datang. Penelitian ini menggunakan metode American Productivity Center (APC). Variabel yang digunakan dalam penelitian ini meliputi variabel output, input tenaga kerja, input material, dan input utilitas. Pengolahan data dilakukan melalui perhitungan indeks produktivitas dan indeks profitabilitas. Evaluasi terhadap produktivitas dan profitabilitas dilakukanviii melalui wawancara dengan pemilik dan pekerja di Usaha Kecil Sari Rasa, kemudian hasil dari wawancara tersebut akan digunakan sebagai acuan untuk pembentukan diagram sebab akibat / fishbone. Dari hasil pengolahan data yang dilakukan, diperoleh hasil indeks produktivitas tenaga kerja (IPL) tertinggi pada bulan Desember 2018 (228,077) dan terendah pada bulan Februari 2017 (102,108). Indeks produktivitas material (IPM) tertinggi pada bulan September 2018 (100,707) dan terendah pada bulan Maret 2018 (99,751). Indeks produktivitas utilitas (IPU) tertinggi pada bulan Oktober 2018 (112,385) dan terendah pada bulan November 2017 (78,901). Adapun faktor yang mempengaruhi rendahnya indeks material yaitu penakaran manual pada material, penurunan performa mesin perajang tempe, meningkatnya harga material, dan pasar yang tidak menentu. Faktor yang mempengaruhi rendahnya indeks produktivitas utilitas yaitu borosnya penggunaan listrik dan air, serta meningkatnya tarif dasar listrik (TDL) dan harga air
English Abstract
Malang is one of the main tourist destinations in East Java. Malang City tourists who continue to increase will certainly increase the demand for transportation, lodging and food industry sectors. Among the three sectors, the food industry sector is the most important because tourists should buy food in tourist places either to be consumed directly or made as souvenirs. One of the souvenirs of Malang is tempe chips. Tempe chips in Malang are produced by a number of Small Businesses based in the Sanan area. One of the producers of Tempe Chips Small Medium Enterprises in Sanan is Small Enterprises of Sari Rasa. Even though it has high production, the profit of the Small Enterprise is not stable, this due to its production is fluctuating every month. Therefore, in order to make the production result and profit are stable, productivity analysis should to be carried out, thus the level of productivity can be known every month during the measurement period and the affecting factor of productivity level. This study aimed to determine the productivity and the affecting factors of productivity, and provide the proposal of improvements to increase the productivity in Small Enterprise of Sari Rasa in the future This study used the American Productivity Center (APC) method. The variables used in this study included variables of output, labor input, material input, and utility input. Data processing was conducted through calculation of productivity index and profitability index. Evaluation of productivity and profitability was conducted through interviews with owners and workers in Small Enterprise of Sari Rasa, then the results ofx interviews would be used as a reference for the formation of a causal/fishbone diagram. According to data processing result, obtained the highest labor productivity index (IPL) in December 2018 (228,077) and the lowest in February 2017 (102,108). The highest material productivity index (HDI) in September 2018 (100,707) and the lowest in March 2018 (99,751). The utility productivity index (IPU) was highest in October 2018 (112,385) and the lowest in November 2017 (78,901). As for the factors that influence the low index of the material, namely manual dosing on materials, decreasing the performance of tempe chopper machines, increasing material prices, and uncertain markets. Factors affecting the low productivity index of utilities are wasteful use of electricity and water, as well as the increase in basic electricity tariffs (TDL) and water prices
