Abstract
Wortel merupakan salah satu komoditas pertanian unggulan di Indonesia khususnya Jawa Timur. Dalam meningkatkan nilai jual produk, wortel dapat diolah menjadi minuman kesehatan yaitu kefir. Kefir wortel merupakan minuman kesehatan yang dibuat dengan proses fermentasi sari wortel. Dalam kehidupan sehari-hari produksi minuman kesehatan seperti kefir sangat tidak mudah dijumpai. Oleh karena itu, perancangan unit produksi kefir wortel dengan Integrated UV Pasteurization and Chemostat Fermentation diperlukan untuk memenuhi kebutuhan pasar. Dalam perancangan unit produksi kefir wortel dengan Integrated UV Pasteurization and Chemostat Fermentation perlu dilakukan suatu analisis untuk mengetahui kelayakan perancangan unit produksi kefir wortel. Analisis yang dilakukan yaitu analisis kelayakan teknis dan ekonomi. Analisis kelayakan teknis berupa kapasitas produksi yaitu 1000 kg wortel per hari dengan waktu produksi 8 jam. Lokasi pabrik yaitu di Kabupaten Pasuruan yang akan berdiri dengan luas areal tanah yaitu 2.000 m2 dengan pola aliran tata letak yaitu tipe U dan tipe tata letak produk. Berdasarkan analisis finansial perancangan unit produksi kefir wortel didapatkan total investasi awal yaitu Rp. 5.579.358.000, total production cost yaitu Rp. 16.188.069.000, harga jual yaitu Rp. 17.000, Break Event Point (BEP) unit yaitu 60.953 unit. Efisiensi bisnis yaitu 1,43 (layak), Net Present Value (NPV) Positif, Internal Rate of Return (IRR) 23,52% (lebih dari bunga deposito), dan Payback Period yaitu 1 tahun, sehingga perancangan unit produksi kefir wortel merupakan perancangan unit produksi yang layak untuk dijalankan.
English Abstract
Carrot is one of the leading agricultural commodities in Indonesia, especially East Java. In increasing the selling value of the product, carrots can be processed into a health drink that is kefir. Kefir carrot is a health drink made with fermentation process of carrot essence. In daily life the production of health drinks such as kefir is not easy to find. Therefore, the design of a carrot kefir production unit with Integrated UV Pasteurization and Chemostat Fermentation is required to meet market needs. In the design of production units of carrot kefir with Integrated UV Pasteurization and Chemostat Fermentation, an analysis is needed to find out the feasibility of designing the production unit of carrot kefir. The analyzes are technical and economic feasibility analysis. Technical feasibility analysis of production capacity is 1000 kg of carrots per day with production time of 8 hours. The location of the factory is Pasuruan Regency which will stand with the land area of 2.000 m2 with the flow pattern of the U type layout and product layout type. Based on the financial analysis of carrot kefir production unit design obtained the total initial investment of Rp. 5,579,358,000, the total production cost is Rp. 16.188.069.000, the selling price is Rp. 17.000, Break Event Point (BEP) unit that is 60,953 units. Business efficiency is 1.43 (feasible), Net Present Value (NPV) Positive, Internal Rate of Return (IRR) 23.52% (more than deposit interest), and Payback Period is 1 year, so the design of production unit of kefir carrot is a decent production unit design to run.
