Abstract

Kediri dikenal memiliki julukan “Kota Tahu”. Menurut data dari Dinas Koperasi dan UMKM Kota Kediri tahun 2012 terdapat 148 perusahaan tahu. Pada tahun 2013 berkurang 2% menjadi 145 perusahaan tahu, karena perusahaan-perusahaan tersebut saling bersaing. Salah satu perusahaan tahu takwa yang masih bertahan hingga sekarang adalah UD. Gudang’e Tahu Takwa (GTT). Proses produksinya UD. GTT masih terdapat kerusakan atau cacat produk mencapai 10%. Kecacatan produk meliputi ukuran yang tidak sesuai standar, kenampakan hancur, tekstur tahu tidak padat, ada kotoran dan warna kusam. Munculnya produk cacat ini merupakan kerugian bagi UD. GTT sehingga perlu melakukan pengendalian kualitas. Salah satu metode pengendalian kualitas adalah Seven Tools, yang terdiri dari 7 tools : (Pareto, Histogram, Fishbone, Scatter, Control Chart, Check Sheet, Flow Chart Diagram). Dengan Seven Tools dapat mengetahui akar masalah produk cacat, serta dapat memberikan solusinya. Hasil penelitian menunjukkan bahwa terdapat 3 jenis cacat dominan yaitu jenis cacat ukuran 42,3%, kenampakan 19,2%, dan kotoran 17,3%. Berdasarkan Cause and Effect Diagram, dari jenis cacat dominan tersebut disebabkan oleh faktor manusia, mesin, metode, material dan lingkungan. Dari faktor penyebab tersebut dapat dibuat usulan tindakan perbaikan kualitas meliputi meningkatkan pengawasan kepada pekerja, melakukan perawatan mesin berkala dan perbaikan peralatan, kualitas bahan baku kedelai, membuat SOP secara tertulis, serta penataan ulang area produksi dan pemasangan turbine venture.

English Abstract

Kediri is known to have the nickname "City of Tofu". According to data from the Department of Cooperatives and SMEs Kediri in 2012 there are 148 companies know. In 2013 the number of tofu companies decreased by 2% to 145 companies, did not close the possibility of reduced number of companies know will increase because these companies compete against each other. One company knows the piety that still survive until now is UD. Gudang'e Tahu Takwa (GTT). Production process in UD. GTT still has damage or defects of products reaches 10%. Product defects include nonstandard size, crushed appearance, no tough texture, dust and dull color. The appearance of this defective product is a disadvantage for UD. GTT so it needs to do quality control. One of the quality control methods is Seven Tools, which consists of 7 tools: (Pareto, Histogram, Fishbone, Scatter, Control Chart, Check Sheet, Flow Chart Diagram). With Seven Tools can find out the root of the problem of defective products, and can provide a solution. Result of research indicate that there are 3 types of defect dominant that is type defect size 42,3%, appearance 19,2%, and dirt 17,3%. Based on the Cause and Effect Diagram, the type of dominant defect is caused by human factors, machinery, methods, materials and environment. From these factors can be made suggestions for quality improvement measures include improving supervision to workers, periodic maintenance of machinery and equipment repair, soybean raw material quality, making SOP in writing, as well as rearranging the production area and installation of turbine venture
