Abstract

Kekurangan energi protein merupakan salah satu masalah gizi utama di Indonesia, jika dilihat dari rata-rata asupan protein balita masih tergolong rendah. Kekurangan energi protein sendiri merupakan dampak dari asupan makan yang kurang dalam jangka waktu yang lama dimana tubuh tidak mendapatkan asupan gizi yang cukup dan berdampak pada buruknya status gizi balita yang dapat menyebabkan stunting dan atau wasting serta gizi kurang. Oleh karena itu, peningkatan konsumsi bahan pangan sumber protein tinggi perlu digencarkan salah satunya dengan pemanfaatan belalang kayu sebagai sumber protein tinggi yang memiliki kandungan protein 17 g/100 g bahan makanan. Penelitian ini bertujuan untuk mengetahui kandungan fenilalanin, isoleusin dan prolin pada tepung belalang kayu (Valanga nigricornis) dengan metode pengeringan matahari dan pengeringan oven. Penelitian ini merupakan penelitian semi eksperimental dimana tidak terdapat variable kontrol. Pengeringan matahari dilakukan 3 hari selama 7 jam, pengeringan oven dilakukan 1 hari selama 7 jam dengan suhu 50oC. Analisis asam amino menggunakan analisis UPLC. Hasil penelitian menunjukkan bahwa belalang kayu segar mengandung protein 17,7% per 100 gram bahan makanan dan tepung belalang kayu mengandung 56 gram protein/100 gram bahan makanan pada pengeringan matahari dan 57,3 gram protein/100 gram bahan makanan pada pengeringan oven. Kandungan isoleusin, fenilalanin dan prolin pada tepung belalang kayu dengan pengeringan matahari lebih tinggi dibandingkan pengeringan oven. Pada pengeringan matahari terdapat kandungan isoleusin sebanyak 2,542 g/100 g, fenilalanin 1,796 g/100 g, dan prolin 3,295 g/100 g tepung belalang kayu, sedangkan pada pengeringan oven terdapat kandungan isoleusin 2,092 g/100 g, fenilalanin 1,768 g/100 g dan prolin 2,933 g/100 g tepung belalang.

English Abstract

Protein caloric deficiency is one of the prominent nutrition problem in Indonesia, the average protein intake of the toddlers that is still classified in a low scale. The protein caloric deficiency is the impact of inadequacy food intake in a long periode of time which the body does not get an adequate nutrition intake and impact to exacerbation nutritional status of the toddlers to define the causes for manifestation such as wasting, stunting and under-nutrition. Therefore, increased consumption of food high protein sources need to be unceasing by the utilization of wood locust as a food high protein sources that had a protein content of 17 g/100 g of food ingredients. This research aimed to know the content od isoleucine, phenylalanine and proline of wood locust (Valanga nigricornis) with sun-drying and oven-drying method. This research was an semi-experimental which had no variable control. The sun-drying was done in 3 days for 7 hours, while the oven-drying was done in one day for 7 hours with temperatures of 50 oC. The analysis of amino acids was using UPLC analysis. The result showed that in fresh wood locust contained of 17,7% of protein per 100 grams of food ingredients and wood locust’s flour contained of 56 grams of protein per 100 grams of food ingredients using sun-drying method and 57,3 grams of protein per 100 grams of food ingredients. The content of isoleucine, phenylalanine and proline in wood locust’s flour with sun-drying method was higher than those of the oven-drying method. On the sun-drying’s flour there were contain of isoleucine of 2,542 grams/100 grams, phenylalanine of 1,796 grams/100 grams and proline of 3,295 gram/100 grams of wood locust’s flour, while on the oven-drying’s flour there were contain of isoleucine of 2,092 grams/100 grams, phenylalanine of 1,768 grams/100 grams and proline of 2,933 grams/100 grams of wood locust’s flour
