Abstract
Pengendalian sistem kontrol pada pasteurisasi susu sapi berbasis electrical ohmic heating merupakan salah satu pengendalian agar tidak terjadi overheating atau pemanasan yang berlebih yang dapat merusak kandungan gizi didalamnya.Pada sistem kontrol yang biasa digunakan adalah sistem kontrol on- off. Sehingga pada sistem kontrol on -off, keluaran tidak diukur atau diumpan balikan untuk dibandingkan dengan masukan,jadi ketelitian sistem bergantung pada kalibrasi. Sehingga dari kondisi tersebut maka diperlukan suatu metode sistem kontrol yang memiliki respon yang cepat serta memiliki ketelitian pembacaan yang akurat atau hampir mendakati. Sistem kontrol Proportional,Integral,Derivative controller (PID) untuk menentukan presisi suatu sistem instrumentasi dengan karakteristik adanya umpan balik pada sistem tesebut Penelitian ini bertujuan untuk merancang dan mengetahui pengaruh sistem kontrol PID. Tuning pada sistem kontrol PID dilakukan secara empirik. Berdasarkan penelitian tersebut diketahui bahwa waktu pemanasan dengan tegangan 160 V yaitu selama 453 detik, pada tegangan 240 V selama 195 detik dan pada tegangan 320 selama 136 detik. Sementara konsumsi nilai arus listrik tidak beda nyata dengan on – off yaitu 1,51 A. perlakuan terbaik terdapat pada tegangan 320 V dengan pengendalian PID yaitu memiliki efisiensi sebesar 96 %.
English Abstract
Application of control system in the electrical ohmic heating-based pasteurization of cow milk is one of solution to prevents overheating which is enable to damage nutrient contents of milk. The control system that was often used was the on-off control system in which the output was not affected by controlling action. Thus, in the on-off control system, the output was not measured or feed back in order to be compared to the input so that every input has one constant operation condition. From that condition, it will require a control system method which has a quick response and an accurate reading. The PID (Proportional-Integral Derivative controller) control system is control system that determaines the precision of an instrumentation system with a feed back characteristic in the system. This research aimed to design and reveal the influence of PID control system. The tuning in the PID control system was conducted empirically. Based on the research, it was obtained that the heating time with electric voltage 160 V was 453 seconds, with electric voltage 240 V was 195 seconds, and with electric voltage 320 V was 136 seconds. Meanwhile, the consumption of electric current was not different with the on-off control system, which is 1,51 A. The best treatment was in voltage 320 V with the efficiency of PID control was about 96 %.
