Abstract

Pisang klutuk(Musa balbisiana Colla)adalah pisang kelas rendah yang jarang dikonsumsi buahnya karena bijinya banyak. Kandungan fenol pada pisang yakni catechin, epicatechin, gallocatechin, dan epigallocatechin. Kadar epigallocatechin pada tanin buah pisang yakni sebesar 88% hingga 98%. Banyak penelitian telah membuktikan bahwa epigallocatechin salah satu polifenol memiliki kemampuan menghambat pertumbuhan sel kanker.Tujuan penelitian yakni untuk mengidentifikasi epigallocatechin dan mengetahui kadar epigallocatechin pada biji pisang klutuk berdasarkan tingkat kematangan. Rancangan percobaan menggunakan metode Rancangan Acak Kelompok (RAK) yang terdiri dari faktor tunggal yakni tingkat kematangan biji pisang klutuk. Biji pisang klutuk yang diamati yakni pisang klutuk mature dan ripe. Pada penelitian ini dilakukan 8 kali ulangan dan diperoleh 16 unit percobaan. Berdasarkan hasil penelitian bahwa didalam biji pisang klutuk tidak terdeteksi senyawa epigallocatechin sehingga tidak dapat ditentukan kadarnya. Biji pisang klutuk berpotensi menjadi bahan sediaan anti kanker karena memiliki total fenol yang tinggi.Larutan ekstrak biji pisang klutuk yang memiliki kandungan total fenoltertinggi yaitu larutan yang ekstrak mature sebesar 23642,11 µgGAE/ml. Tingkat kematangan buah tidak memberikan pengaruh secara nyata terhadap kandungan total fenol pada biji pisang klutuk

English Abstract

Klutuk Banana (Musa balbisiana Colla) is a low-grade banana which is rarely consumed by its fruit because of its many seeds. Phenol content in bananas namely catechin, epicatechin, gallocatechin, and epigallocatechin. Epigallocatechin levels in banana tannins are 88% to 98%. Many studies have proven that epigallocatechin, one of the polyphenols, has the ability to inhibit cancer cell growth. The aim of the study was to identify epigallocatechin and determine epigallocatechin levels in klutuk banana seeds based on their maturity level. The experimental design used the Randomized Block Design (RBD) method which consisted of a single factor namely the maturity level of klutuk banana seeds. Klutuk banana seeds were observed namely mature and ripe klutuk bananas. In this study 8 replications were carried out and 16 experimental units were obtained. Based on the results of the study that epigallocatechin compounds were not detected in klutuk banana seeds so they could not be determined.. Klutuk banana seeds have the potential to be anti-cancer preparations because it contains a high total phenol. The solution of klutuk banana seed extract which has the highest total phenol content, namely the solution which is mature extract is 23642.11 µgGAE/ml. The fruit maturity level did not significantly influence the total phenol content of klutuk banana seeds
