Abstract
Kopi merupakan komoditas ekspor penting bagi Indonesia yang mampu menyumbang devisa yang cukup besar. Pada saat ini tuntutan pelanggan terhadap produk kopi semakin tinggi. Pelanggan mulai menuntut aspek variasi, aspek kecepatan respon, inovasi dan fleksibilitas (Pujawan, 2005). Oleh karena itu, dalam memenuhi permintaan dan kebutuhan pelanggan diperlukan pengintregasian yang efisien dari sistem rantai pasok. PT Rolas Nusantara Mandiri merupakan perusahaan yang bergerak di bidang agroindustri yang berkantor pusat di Surabaya, Jawa Timur dengan produk utama salah satunya kopi luwak. Penelitian ini bertujuan adalah untuk menentukan kinerja manajemen rantai pasok kopi luwak PT Rolas Nusantara Mandiri dan menentukan usulan skenario alternatif dalam model perbaikan rantai pasok kopi luwak. Pengukuran kinerja rantai pasok dilakukan dengan integrasi model Performance of Activity (POA) dan model Supply Chain Operations Reference (SCOR) berbasis Pairwise Comparison dan Objective Matrix (OMAX). Tiap-tiap atrinut yang digunakan dalam pengukuran rantai pasok diberikan bobot dengan menggunakan metode Pairwise Comparison. Setelah mengetahui bobot dan target pencapaian dari masing-masing indikator kinerja, selanjutnya dilakukan perhitungan scoring system dengan Objective Matrix (OMAX). Kinerja rantai pasok yang memiliki nilai rendah akan dilakukan perbaikan dengan melakukan simulasi menggunakan metode System Dynamics. Hasil penelitian menunjukkan bahwa kinerja rantai pasok kopi luwak PT Rolas Nusantara Mandiri bernilai cukup (0,58 untuk produk Kopi Bubuk Luwak Arabica 12 gr dan 0,69 untuk xiv produk Roasted Luwak Arabica 150 gr). Skenario alternatif terbaik dalam model perbaikan sistem manajemen rantai pasok kopi luwak adalah model kebijakan inventory turn over 4 kali per tahun dan inventory days of supply 90 hari. Hasil perbaikan kinerja rantai pasok kopi luwak PT Rolas Nusantara Mandiri sebesar 0,813 (Kopi Bubuk Luwak Arabica 12 gr) dan 0,818 (Roasted Luwak Arabica 150 gr). Saran terhadap pengembangan penelitian ini adalah agar dilakukan pemodelan dan simulasi rantai pasok secara keseluruhan, tidak hanya model dan simulasi untuk kinerja yang akan diperbaiki saja, agar karakteristik dari rantai pasok yang akan diukur lebih jelas dan terperinci.
English Abstract
Coffee is an important export commodity for Indonesia that can contribute large exchange. Current needs of coffee was higher. Costumer begin strive for aspect of variations, responsibility, innovations and flexibility (Pujawan, 2005). Therefore, within fulfill a demand and costumer requirement needful efficient integration from supply chain’s system. PT Rolas Nusantara Mandiri is an agroindustry in Surabaya, Jawa Timur with civet coffee as it’s main product. This study aimed to determine the performance of Civet Coffee’s supply chain in PT Rolas Nusantara Mandiri and determine alternative scenario recommendation in improving of civet coffee’s supply chain. Performance Measure of supply chain was done by integration of Performance of Activity (POA) model and Supply Chain Operations Reference (SCOR) based Pairwise Comparison and Objective Matrix (OMAX). Attribute that use to measure of supply chain given weight using Pairwise Comparison method. After that, was done by scoring system measure using Objective Matrix (OMAX). The low’s value of performance supply chain were improved using System Dynamics simulation. The result of study showed that the performance of civet coffee’s supply chain in PT Rolas Nusantara Mandiri have medium value (0,58 for 12 gr civet coffee Arabica’s powder and 0,69 for 150 gr civet coffee Arabica’s roasted). The best of alternative improvement scenario model of civet coffee’s supply chain was policy model of inventory turn over which was 4 time per year and inventory days of supply of 90 days. The result of civet coffee’s supply chain improvement in PT Rolas Nusantara xvi Mandiri became 0,813 (12 gr civet coffee Arabica’s powder) and 0,818 (150 gr civet coffee Arabica’s roasted). Recommendations for the development of this research are to construct the supply chain’s modelling and simulation to be more complex and detailed not only modelling and simulation that improve, in order that the characteristic of supply chain can be measure more clear and detailed. It was suggested for further research to construct more complex and detail supply chain modeling and simulation, in order to measure characteristics of supply chain clearly and specifically.
