Abstract

Koperasi Agro Niaga (KAN) Jabung merupakan salah satu industri yang bergerak di bidang pengolahan susu sejak tahun 1980. Produksi susu sapi KAN Jabung kurang lebih sebanyak 6.000 liter susu per hari yang dihasilkan oleh 1500 orang peternak. Susu yang dihasilkan oleh KAN Jabung tidak hanya diolah untuk pembuatan produk olahan susu, namun juga dikirim ke PT Nestle Indonesia. Target produksi susu pasteurisasi di KAN Jabung sebanyak 1000 liter per hari, namun rata-rata KAN Jabung hanya mampu memproduksi susu pasteurisasi sebesar 716,8 liter. Metode yang digunakan pada penelitian ini adalah Overall Throughput Effectiveness (OTE) dan Fault Tree Analysis (FTA). Metode OTE digunakan untuk mengukur tingkat efektivitas mesin produksi secara sub-sistem dan Six Big Losses pada setiap mesin. Metode FTA digunakan untuk mengidentifikasi resiko yang menyebabkan terjadinya suatu kegagalan dan untuk menentukan alternatif strategi perbaikan. Hasil penelitian menunjukkan nilai OTE pada bulan Januari sebesar 78,50% dan pada bulan Februari sebesar 81,46%. Nilai six big losses pada bulan januari antara lain breakdown losses sebesar 0,000%, setup and adjustment losses sebesar 0,000% dan reduced speed losses sebesar 21,426%. Nilai six big losses pada bulan Februari antara lain breakdown losses sebesar 0,852%, setup and adjustment losses sebesar 0,511% dan reduced speed losses sebesar 17,859. Faktor penyebab kegagalan mesin antara lain jumlah produksi susu yang kecil, kontrol sistem mesin PHE yang bermasalah, karet seal mesin packing terputus dan bagian cutting mesin packing terbakar. Strategi perbaikan yang dapat dilakukan yaitu melakukan preventive maintenance, menggunakan checklist pemeliharaan mesin, melakukan pembersihan berkala, memeriksa dan mengganti sparepart mesin yang tidak dapat diperbaiki.

English Abstract

Cooperative Agro Niaga Jabung (KAN) is one of the industries engaged in milk processing since 1980. KAN Jabung's milk production is approximately 6,000 liters of milk per day produced by 1500 breeders. Milk produced by KAN Jabung is not only processed for the manufacture of dairy products, but is also sent to PT Nestle Indonesia. The target of pasteurized milk production in KAN Jabung is 1000 liters per day, but on average, KAN Jabung is only able to produce pasteurized milk of 716.8 liters. The method used in this research is Overall Throughput Effectiveness (OTE) and Fault Tree Analysis (FTA). The OTE method is used to measure the level of effectiveness of the production machine by sub-system and the Six Big Losses on each machine. The FTA method is used to identify the risks that cause a failure and to determine alternative improvement strategies. The results showed that the OTE value in January was 78.50% and in February it was 81.46%. The value of six big losses in January includes breakdown losses of 0,000%, setup and adjustment losses of 0,000% and reduced speed losses of 21,426%. The value of six big losses in February included breakdown losses by 0.852%, setup and adjustment losses by 0.511% and reduced speed losses by 17.859. Factors causing machine failure include a small amount of milk production, a problem with the PHE machine control system, the rubber seal of the packing machine is broken and the cutting part of the packing machine is burned. Repair strategies that can be carried out are carrying out preventive maintenance, using a machine maintenance checklist, performing periodic cleaning, checking and replacing machine spare parts that cannot be repaired.
