Abstract

Konsumsi pisang Jawa Timur yang tinggi berpotensi menghasilkan sejumlah besar kulit pisang. Pada 2016 kulit pisang mancapai 1,865,772 ton. Kulit pisang kurang termanfaatkan, namun berpotensi sebagai penghasil pektin. Tujuan penelitian untuk mengoptimalkan efek faktor konsentrasi pelarut dan waktu ekstraksi pada rendemen, kadar metoksil, kadar asam galakturonat, dan derajat esterifikasi. Ekstraksi pektin menggunakan Microwave Assisted Extraction (MAE) dan teknik optimasi yang digunakan adalah response surface metodology-central composite design. Faktor yang digunakan adalah konsentrasi pelarut rentang 1-3% dan waktu ekstraksi rentang 2-4 menit. Analisis data dengan program design expert untuk mendapat kondisi optimum yang kemudian dilakukan verifikasi dengan cara membandingkan respon hasil penelitian dengan prediksi, dengan selisih <5%. Hasil prediksi menunjukkan titik optimal pada konsentrasi pelarut 2,62% dan waktu ekstraksi 2 menit, dengan rendemen 9,02947% kadar metoksil 6,01088%, kadar asam galakturonat 209,429%, dan derajat esterifikasi 16,3394%. Hasil verifikasi diperoleh pektin dengan rendemen 9,0110%, kadar metoksil 6,0135%, kadar asam galakturonat 209,450%, dan derajat esterifikasi 16,3%. Sehingga hasil verifikasi telah sesuai dengan prediksi program, karena selisihnya <5%.

English Abstract

High consumption of bananas in East Java have the potential to produce large amounts of banana peels. In 2016 it’s reached 1,865,772 tons. It’s rarely utilized, but still have the potential to produce pectin. The purpose of this study to optimize the effects of processing factors solvent concentration and extraction time on the yield and methoxyl content, galacturonic acid content and degree of esterification. The extraction method in this study use Microwave Assisted Extraction (MAE) and the optimization technique used is response surface methodology typed central composite design. The factors used were solvent concentration range 1 to 3% and extraction time range 2 to 4 min. The results analyzed by design expert program, then most optimum treated product would be verified by comparing the responses value of actual result and program calculation result on the signification <5%. Optimum result prediction showed on 2,62% for solvent concentration and extraction time of 2 min, with the following characterization of pectin yield (9,02947%) methoxyl content (6,01088%), galacturonic acid content (209,429%), and degree of esterification (16,3394%). While the verification result showed that optimum condition obtained yield (9,0110%) methoxyl content (6,0135%), galacturonic acid content (209,450%), and degree of esterification (16,3%). So, it was appropriate with the prediction given by program where the differences were <5%
