Abstract

Antioksidan menjadi salah satu penelitian yang sering dilakukan pada tumbuhan mangrove, hal ini disebabkan oleh antioksidan memegang peran penting dalam adaptasi tumbuhan terhadap tekanan abiotik dan biotik. Banyak penelitian berkembang untuk menguji khasiat dan kegunaan mengonsumsi Sonneratia alba. Tujuan dari penelitian ini adalah untuk mengetahui fitokimia, proksimat dan aktivitas antioksidan dari ekstrak etanolat dari kulit batang dan daun Sonneratia alba. Penelitian dilaksanakan di Laboratorium Perekayasaan Hasil Perikanan Fakultas Perikanan dan Ilmu Kelautan Universitas Brawijaya Malang pada bulan Mei – Juni 2018. Metode yang digunakan dalam penelitian yaitu metode deskriptif eksploratif. Prosedur penelitian ini dimulai dari preparasi bahan baku, dilanjutkan dengan melakukan ekstraksi, kemudian dilakukan uji fitokimia, uji antioksidan, uji proksimat dan uji mineral. Dari hasil uji fitokimia, baik kulit batang maupun daun negatif alkaloid dan steroid, positif flavonoid, tanin, triterpenoid dan saponin. Kulit batang Sonneratia alba memiliki nilai kadar air sebesar 38,23%, kadar protein 1,91%, kadar lemak 0,85%, kadar abu 6,21%, kadar karbohidrat sebesar 37,16% dan kadar serat sebesar 15,64%. Sedangkan daun Sonneratia alba memiliki nilai kadar air sebesar 48,11%, kadar protein 2,78%, kadar lemak 1,04%, kadar abu 4,16%, kadar karbohidrat sebesar 31,56% dan kadar serat sebesar 12,35%. Ekstrak etanolat kulit batang Sonneratia alba memiliki potensi aktivitas antioksidan dengan nilai IC50 sebesar 150,519 ± 19,641 ppm yang artinya lebih lemah dibandingkan ekstrak etanolat daun Sonneratia alba yang memiliki potensi aktivitas antioksidan lebih kuat dengan nilai IC50 sebesar 59,876 ± 45,493 ppm. Kulit batang Sonneratia alba memiliki kandungan Pb sebesar 3,476 ppm dan Fe sebesar 107,35 ppm. Sedangkan daun Sonneratia alba memiliki kandungan Pb sebesar 1,586 ppm dan Fe sebesar 98,21 ppm.

English Abstract

Antioxidants become one of the most frequent studies of mangrove plants, this is because antioxidants play an important role in plant adaptation to abiotic and biotic pressures. Many studies have evolved to test the efficacy and usefulness of consuming Sonneratia alba. The purpose of this study was to determine the phytochemical, proximate and antioxidant activity of ethanolic extracts from the bark and leaves of Sonneratia alba. The research was conducted in Fishery Engineering Laboratory of Fishery and Marine Science Brawijaya University, Malang on May - June 2018. The method that used in this research is descriptive explorative method. This research procedure starts from raw material preparation, followed by extraction, phytochemical test, antioxidant test, proximate test and mineral test. From the results of phytochemical tests, both stem and leaf bark are negative alkaloids and steroids but flavonoids, tannins, triterpenoids and saponins are positive. The bark of Sonneratia alba has a water content value of 38.23%, 1.91% protein content, 0.85% fat content, 6.21% ash content, 37.16% carbohydrate content and 15.64% fiber content. While the leaves of Sonneratia alba have a water content value of 48.11%, 2.78% protein content, 1.04% fat content, 4.16% ash content, 31.56% carbohydrate content and 12.35% fiber content. Sonneratia alba’s bark ethanolic extract has antioxidant activity potency with IC50 value of 150,519 ± 19,641 ppm which means weaker than ethanolic extract of Sonneratia alba’s leaf which has stronger potency of antioxidant activity with IC50 value as 59,876 ± 45,493 ppm. The bark of Sonneratia alba has a Pb content of 3.476 ppm and Fe of 107.35 ppm. While the leaves of Sonneratia alba has a Pb content of 1,586 ppm and Fe of 98.21 ppm.
