Abstract
Ditandai dengan produksi dalam negeri selama beberapa kurun waktu cenderung mengalami penurunan sehingga mengakibatkan Indonesia masih harus mengimpor tidak kurang dari 2,2 juta ton per tahun. Salah satu BUMN yang ada di Jawa timur ialah Perseroan Terbatas Perkebunan Nusantara (PTPN) X dimana salah satu pabriknya melakukan pengolahan berbasis tebu yakni di Pabrik Gula (PG) Kremboong Sidoarjo. Dalam penelitian ini digunakan konsep pendekatan lean manufacturing. Value Stream Mapping (VSM) digunakan untuk menemukan waste dalam penggambaran value stream dalam bentuk peta dan VALSAT (Value Stream Analysis Tools) untuk mengidentifikasi penyebab terjadinya pemborosan. Hasil penelitian menunjukkan bahwa pemborosan tertinggi pada proses produksi Gula Kristal Putih PG Kremboong adalah pemborosan unnecessary inventory sebesar 2% dan waiting sebesar 1,4%. Tools yang digunakan untuk mengidentifikasi yaitu Process Activity Mapping dan Supply Chain Response Matrix. Berdasarkan tool Process Activity Mapping diperoleh total waktu pada saat proses produksi selama 1212,07 menit terdapat pada current state map setelah dilakukan rekomendasi perbaikan berdasarkan diagram fishbone maka total waktu yang diperoleh selama 1176,23 pada future state map terjadi pengurangan waktu selama 35,84 menit. Hasil perhitungan Supply Chain Response Matrix diperoleh nilai Days Physical Stock (DPS) tertinggi pada area processing sebesar 16,5 days dan nilai DPS terendah sebesar 0,30 day.
English Abstract
Characterized by domestic production for several periods tend to decrease so that Indonesia still have to import not less than 2.2 million tons per year. One of the state-owned enterprises in East Java is PT Perkebunan Nusantara (PTPN) X, where one of its factories is processing sugarcane-based sugar factory in Kremboong Sidoarjo Sugar Factory (PG). In this research, the concept of lean manufacturing approach is used. Value Stream Mapping (VSM) is used to find waste in depiction of value streams in the form of maps and VALSAT (Value Stream Analysis Tools) to identify causes of waste. The results showed that the highest waste in the production process of PG Kremboong White Crystal Sugar is unnecessary inventory waste of 2% and waiting for 1.4%. Tools used to identify the Process Activity Mapping and Supply Chain Response Matrix. Based on Process Activity Mapping tool obtained total time during production process during 1212,07 minute found at current state map after done improvement recommendation based on fishbone diagram then total time obtained during 1176,23 in future state map happening reduction time 35,84 minutes. The Supply Chain Response Matrix result obtained the highest Days Physical Stock (DPS) value in the processing area of 16.5 days and the lowest DPS value of 0.30 day.
