Abstract

Industri pangan memajukan perekonomian Indonesia dilihat dari munculnya produk makanan. PT. Gangsar Snack and Food merupakan produsen kacang shanghai yang berkontribusi di Kabupaten Tulungagung, Jawa Timur. Perusahaan ini memiliki kapasitas produksi kacang shanghai mencapai 7.000 kg per hari. Perencanaan kebutuhan bahan baku di perusahaan didasarkan keputusan kepala produksi melihat persediaan di gudang penyimpanan. Oleh karena itu, penelitian ini bertujuan untuk menentukan persediaan bahan baku kacang shanghai di PT. Gangsar Snack and Food yang memberikan biaya minimal dalam perencanaan kebutuhan persediaan bahan baku di PT Gangsar Snack and Food. Metode untuk menyelesaikan masalah menggunakan Material Requirement Planning (MRP). MRP merupakan suatu teknik sistematis dalam penentuan kuantitas serta waktu dalam proses pengendalian kebutuhan bahan terhadap komponen-komponen permintaan yang saling bergantungan. Perencanaan kebutuhan bahan baku dengan metode MRP yang penerapannya diawali dengan melakukan peramalan jumlah permintaan untuk waktu yang akan datang. Peramalan dilakukan dengan menggunakan software IBM SPSS Statistics 24 menggunakan metode simple seasonal dan winters’ additive. Data hasil peramalan diolah dan dilakukan perbandingan 2 teknik lot sizing yaitu dengan teknik perusahaan, Lot for lot, Economic Order Quantity (EOQ) dan.teknik kombinasi Berdasar hasil penelitian, didapat hasil perencanaan bahan baku di PT. Gangsar Snack and Food. Alternatif teknik yang dapat digunakan dalam perencanaan kebutuhan bahan baku diantaranya teknik Lot for lot dengan biaya Rp 19.790.687.693, EOQ Rp 26.177.777.915, dan teknik kombinasi Rp 23.438.576.958. Penghematan biaya persediaan dengan teknik Lot for lot sebesar 23,40% dan teknik kombinasi 9,28%. Teknik EOQ tidak menghemat biaya dikarenakan biaya persediaan lebih besar disbanding biaya yang dikeluarkan perusahaan. Teknik kombinasi dapat dilakukan evaluasi pada perusahaan karena dapat menghemat biaya persediaan dengan pertimbangan optimasi persediaan kebutuhan bahan baku. Teknik ini menggabungkan antara teknik Lot for lot, EOQ, dan teknik yang diterapkan pada perusahaan. Bahan baku yang dapat direncanakan menggunakan Lot for lot adalah gula, garam, dan bawang. Bahan yang diterapkan dengan teknik EOQ adalah tepung terigu cap pensil, minyak, dan kemasan. Teknik kombinasi memperkecil kemungkinan kekurangan bahan baku mempertimbangkan jumlah pemesanan dan waktu pemesanan.

English Abstract

The food industry is advancing the Indonesian economy by the emergence of food products. PT. Gangsar Snack and Food is a shanghai peanut producer that contributes in Tulungagung District, East Java. The company has shanghai peanut production capacity reach 7000 kg per day. Planning needs of raw materials in the company based on the production head's decision to see inventory in storage warehouse. Therefore, this study aims to determine the raw material stock of shanghai beans in PT. Gangsar Snack and Food which provides minimal cost in the planning of raw material inventory at PT Gangsar Snack and Food. Method to solve problems using Material Requirement Planning (MRP). MRP is a systematic technique in determining the quantity and time in the process of controlling the material requirements of the dependent demand components. Planning of raw material needs with MRP method whose application begins by forecasting the number of requests for the time to come. Forecasting is done using IBM SPSS Statistics 24 software using simple seasonal and winters' additive methods. Data forecasting results are processed and done comparison of lot sizing techniques that is by company technique, Lot for lot techniques, Economic Order Quantity (EOQ), and combination technique. Based on the results of research, obtained the results of raw material planning at PT. Gangsar Snack and Food. Alternative techniques that can be used in the planning needs of raw materials such as Lot for lot techniques with a cost of Rp 19,790,687,693, EOQ Rp 26.177.777.915, and the combination technique Rp 23.438.576.958. Inventory cost savings by lot for lot technique is 23,40% and combination technique 9,28%. EOQ techniques do not save costs because the cost of inventory is greater than the cost incurred by the company. Combination techniques can be evaluated at the company because it can save inventory costs with consideration of raw material inventory optimization. This technique combines the Lot for lot, EOQ, and techniques applied to the company. Raw materials that can be planned using Lot for lots are sugar, salt, and onions. Materials applied by EOQ techniques are wheat flour pencils, oils, and packaging. Combination techniques minimize the likelihood of shortage of raw materials taking into account order quantity and time of order.
