Abstract
Bekatul merupakan hasil samping dari proses penggilingan padi yang kaya kandungan gizi dan pemanfaatannya masih terbatas. Selama proses penggilingan padi, sekitar 8% dari hasil penggilingan yang berupa bekatul akan dipisahkan dari biji. Produksi padi di Indonesia pada tahun 2016 mencapai 79 juta ton, maka bekatul yang dihasilkan sekitar 7,9 juta ton. Ketersediaan yang cukup besar memberikan perluang bekatul untuk dikembangkan menjadi bahan pangan bernilai ekonomi tinggi. Sereal sarapan merupakan salah satu alternatif pengolahan bekatul menjadi bahan pangan yang kaya akan gizi bagi kesehatan manusia. Pemilihan sereal sarapan sebagai olahan bekatul diharapkan dapat diterima oleh masyarakat karena sifatnya yang praktis, mudah disajikan dan memiliki cita rasa yang enak. Berdasarkan formulasi terbaik yang diperoleh pada penelitian skala laboratorium maka perlu dilakukan penggandaan skala. Proses pada skala ganda membutuhkan jumlah bahan yang lebih besar sehingga diperlukan penyesuaian pada mesin dan peralatan yang digunakan. Tujuan penelitian ini untuk mengetahui kualitas produk rice bran cereal pada skala ganda dibandingkan dengan hasil pada skala laboratorium dan mengetahui kebutuhan bahan serta utilitas pada proses pembuatan rice bran cereal skala ganda. Rice bran cereal yang telah dibuat lalu diuji organoleptik, dan kimia. Pengujian organoleptik menggunakan metode uji pembedaan yang dilakukan oleh 30 panelis agak terlatih untuk membandingkan kualitas rice bran cereal pada skala laboratorium dan skala ganda. Pengujian kimia meliputi kadar air, kadar lemak, kadar protein, kadar karbohidrat dan kadar abu, dan rendemen. Hasil pengujian kualitas dilakukan uji t untuk membandingkan dengan skala laboratorium. Selanjutnya dihitung jumlah kebutuhan bahan yang digunakan selama proses dan biaya utilitas yang dibutuhkan untuk membuat rice bran cereal pada skala ganda. Pada penelitian skala ganda terdapat peningkatan kapasitas produksi rice bran cereal sebanyak 30 kg berdasarkan formulasi akhir yang digunakan. Hasil dari uji organoleptik pada rice bran cereal meliputi rasa, aroma, dan warna panelis menyatakan tidak terdapat beda nyata antara hasil skala laboratorium dan skala ganda. Hasil uji kimia pada rice bran cereal skala ganda menghasilkan produk dengan kandungan lemak total 4,21 gr, protein 11,64 gr, karbohidrat total 74,9 gr, air 3,28 gr, dan abu 5,97 gr. Jumlah kebutuhan bahan per batch meliputi bekatul 6,54 kg, MOCAF 11,15 kg, gula 3,85 kg, garam 0,38 kg, jahe 1,15 kg, air 3,08 kg, dan susu skim 3,85 kg. Jumlah kebutuhan utilitas per batch meliputi kebutuhan air sebanyak 0,475 m3, listrik 4,67 KWh, dan kebutuhan LPG sebesar 1,2 kg.
English Abstract
Bran is a by-product of the rice milling process which is rich in nutritional content and its utilization is still limited. During the rice milling process, about 8% of the milled product in the form of rice bran will be separated from the beans. Paddy production in Indonesia in 2016 reached 79 million tons, so the rice bran produced was around 7.9 million tons. Availability is large enough to provide bran opportunity to be developed into high economic value food. Breakfast cereal is an alternative for processing rice bran into food that is rich in nutrients for human health. The selection of breakfast cereals as processed rice bran is expected to be accepted by the public because of its practical nature, easy to serve and has a good taste. Based on the best formulation obtained in laboratory-scale research, it is necessary to do a doubling of the scale. Processes on a dual scale require a larger amount of material so adjustments are needed to the machines and equipment used. The purpose of this study was to determine the quality of bran cereal products on a multiple scale compared to results on a laboratory scale and to determine the material requirements and utilities in the process of making bran cereal on a multiple scale. The rice bran cereal that has been made is then tested for organoleptic and chemical tests. Organoleptic testing used the difference test method conducted by 20 somewhat trained panelists to compare the quality of rice bran on a laboratory scale and multiple scales. Chemical tests include moisture content, fat content, protein content, carbohydrate content and ash content, and yield. The quality test results were carried out by a t test to compare with the laboratory scale. Next, the amount of material used during the process and the utility costs needed to make bran cereals are calculated on a double scale. In a double-scale study, there was an increase in rice bran production capacity of 30 kg based on the final formulation used. The results of organoleptic tests on rice bran cereal including taste, aroma, and color of the panelists stated that there was no significant difference between the results on the laboratory scale and multiple scales. The results of chemical tests on rice bran cereal on a double scale yielded a product with a total fat content of 4.21 gr, 11.64 gr protein, 74.9 gr total carbohydrates, 3.28 gr water, and 5.97 gr ash. The amount of material needed per batch includes 6.54 kg of rice bran, 11.15 kg of MOCAF, 3.85 kg of sugar, 0.38 kg of salt, 1.15 kg of ginger, 3.08 kg of water and 3.85 kg of skim milk. The amount of utility needs per batch includes a water requirement of 0.475 m3, electricity of 4.67 KWh, and a requirement of 1.2 kg of LPG.
