Abstract

Menurut data RISKESDAS 2021, salah satu masalah gizi yang masih sering ditemui yaitu rendahnya kualitas maupun kuantitas ASI pada ibu menyusui ditandai oleh 47,2% anak yang tidak memperoleh ASI Eksklusif. Adapun bahan tambahan makanan yang berpotensi untuk meningkatkan dan melancarkan produksi ASI (galactogogue) diantaranya daun kelor, daun katuk, kurma, ubi cilembu. Penelitian ini bertujuan untuk menganalisis tingkat kesukaan terhadap soft-baked cookies yang ditambahkan daun kelor dan daun katuk pada parameter aroma, rasa, warna, tekstur, dan kenampakan keseluruhan. Terdapat 4 kelompok perlakuan perbandingan daun kelor dan daun katuk yaitu P0 (0% : 0%), P1 (100% : 0%), P2 (50% : 50%), P3 (0% : 100%). Subjek penelitian ini yaitu 25 panelis agak terlatih yang merupakan mahasiswa Departemen Gizi FIKES UB semester 4 dan 6 dengan menggunakan skala hedonik 7 skala. Berdasarkan analisis statistik SPSS dengan uji Kruskal-Wallis dan Mann Whitney, menunjukkan adanya perbedaan signifikan (p < 0,05) pada semua parameter. Penentuan taraf perlakuan terbaik menggunakan metode Zeleny dan didapatkan perlakuan terbaik adalah P3. Adapun parameter tekstur P3 memiliki skor 4,17 (netral), parameter kenampakan keseluruhan P3 memiliki skor 4,13 (netral), parameter rasa P3 memiliki skor 4,12 (netral), parameter aroma P3 memiliki skor 4 (netral), dan parameter warna P3 memiliki skor 3,88 (agak tidak suka cenderung netral). Berdasarkan hasil penelitian didapatkan bahwa produk soft-baked cookies dengan penambahan daun kelor dan daun katuk masih dapat diterima

English Abstract

Based on RISKESDAS 2021 data, one of the nutritional problems that is still frequently encountered is the low quality and quantity of breast milk in breastfeeding mothers, characterized by 47.2% of children who do not receive exclusive breastfeeding. Additional food ingredients that have the potential to increase and expedite breast milk production (galactogogue) include Moringa oleifera L., Sauropus androgynus, Phoenix dactylifera, Ipomoea batatas. This study aims to analyze the level of preference for soft-baked cookies added with moringa and katuk leaves on the parameters of aroma, taste, color, texture, and overall appearance. There were 4 treatment groups with a comparison of moringa leaves and katuk leaves, namely P0 (0% : 0%), P1 (100% : 0%), P2 (50% : 50%), P3 (0% : 100%). The subjects of this study were 25 semi-trained panelists who were students of the Nutrition Department of FIKES UB semester 4 and 6 using a hedonic 7 scale. Based on SPSS statistical analysis with the Kruskal-Wallis and Mann Whitney tests, it showed that there were significant differences (p <0.05) in all parameters. Determining the best treatment level using the Zeleny method and the best treatment was P3 with a score of 1.042. The texture parameter P3 has a score of 4.17 (neutral), the overall appearance parameter P3 has a score of 4.13 (neutral), the taste parameter P3 has a score of 4.12 (neutral), the aroma parameter P3 has a score of 4 (neutral), and the parameter the P3 color has a score of 3.88 (rather dislike tends to be neutral). Based on the research results, it was found that soft-baked cookies with the addition of moringa and katuk leaves were still acceptable
