Abstract
Siomay adalah salah satu jenis makanan yang sering dijumpai masyarakat Indonesia. Yamois Indoprima merupakan salah satu usaha yang bergerak pada industri pangan yang memiliki produk unggulan, yaitu siomay ikan tenggiri. Perusahaan Yamois Indoprima memiliki stakeholder penting. Rantai pasok perusahaan Yamois Indoprima perlu mengupayakan rantai pasok berkelanjutan sehingga dapat terhindar dari kerugian ekonomi, lingkugan dan sosial salah satunya dengan menganalisis mitigasi risiko sehingga dapat menghindari risiko-risiko yang akan timbul. Tujuan penelitian ini menganalisis prioritas risiko dan memberikan rekomendasi strategi mitigasi risiko pada rantai pasok produk siomay ikan tenggiri Yamois Indoprima. Metode yang digunakan adalah House of Risk (HOR) yang terdiri dari 2 fase, yaitu HOR 1 dan HOR 2. HOR fase 1 berfungsi melakukan identifikasi risiko untuk menentukan agen risiko yang nantinya dilakukan prioritas untuk tindakan pencegahan. HOR fase 2 merupakan fase menentukan penanganan yang sesuai untuk mengurangi kemungkinan terjadinya dampak yang disebabkan oleh agen risiko. Hasil penelitian menunjukkan beberapa agen risiko prioritas, yaitu penyimpanan freezer pada mobil pengiriman tidak tersedia (A15), ikan tenggiri terbatas (A1), freezer tidak dingin (A3), karyawan sedikit (A5), bahan baku rusak ketika proses distribusi (A2), komunikasi antar atasan dan karyawan kurang (A12), Kemasan belum dicetak tanggal expired (A9), penggunaan alat cetak expired tidak sesuai (A8), bahan adonan kurang (A4), tidak ada perencanaan pemesanan produk (A16), tidak ada pengesat kaki (A20), dan terjadi misscom dengan manufacture (A17). Output strategi tindakan mitigasi, yaitu (PA4), Pengadaan alat cooler box (PA1), Penjadwalan service rutin (PA5), Pencetakkan expired saat memasuki proses pengukusan (PA12), penambahan SOP terkait penggunaan alat cetak expired (PA14) Penambahan SOP perencanaan pemesanan produk (PA15) dan pengadaan pengesat kaki (PA16), pengecekkan suhu rutin (PA6), pertemuan rutin (PA10) dan frekuensi controlling ditambah (PA11), mencari opsi supplier lain (PA2), pengadaan fasilitas kendaraan thermobox (PA9), pengadaan mesin otomatis cetak expired (PA13), dan pengadaan alat produksi pengisian adonan otomatis (PA7).
English Abstract
Siomay is one type of food that is often found by Indonesian people. Yamois Indoprima is one of the businesses engaged in the food industry that has a superior product, namely mackerel fish dumplings. Yamois Indoprima company has important stakeholders, namely suppliers, retailers and consumers. The supply chain of the Yamois Indoprima company needs to strive for a sustainable supply chain so that it can avoid economic, environmental and social losses, one of which is by analyzing risk mitigation so that it can avoid the risks that will arise. The purpose of this study was to analyze risk priorities and recommend risk management strategies for damage to the supply of mackerel fish siomay products from Yamois Indoprima. The method used is the House of Risk (HOR) which consists of 2 phases, namely HOR 1 and HOR 2. HOR phase 1 functions to provide risk assistance to determine risk agents which will be prioritized so that preventive action can be taken. HOR phase 2 is a phase where determining the appropriate treatment in order to reduce the possibility of impacts caused by risk agents. The results of the study resulted in several priority risk agents, namely freezer storage in car deliveries not available (A15), limited mackerel fish (A1), freezers that were not cold (A3), few employees (A5), damaged raw materials during the distribution process (A2) , communication between superiors and employees is lacking (A12), the packaging has not been printed with an expiration date (A9), the use of expired printing equipment is not appropriate (A8), the dough material is lacking (A4), there is no product ordering plan (A16), there is no footstool (A20), and there is a misscom with manufacturing (A17). The output of the countermeasures strategy is (PA4), Procurement of cooler box tools (PA1), Scheduling of routine services (PA5), Printing expiration when entering the steaming process (PA12), adding SOPs related to the use of expired printing equipment (PA14) Adding SOPs for planning product orders (PA15) and procurement of foot controllers (PA16), routine temperature checks (PA6), routine meetings (PA10) and frequency control plus (PA11), looking for other supplier options (PA2), procurement of thermobox vehicle facilities (PA9), procurement of automatic printing machines expiration date (PA13) and procurement of automatic dough filling production equipment (PA7).
