Abstract
Larva black soldier fly merupakan serangga buah yang memiliki nama latin Hermetia illuciens L termasuk kedalam kerabat lalat (keluarga diptera). Siklus hidup pada BSF dibagi menjadi empat fase yaitu telur, larva, pupa dan dewasa. Kandungan lemak pada larva BSF mencapai 20-29% dan kandungan protein pada larva BSF sebesar 42%. Proses pengeringan dengan suhu yang terlalu tinggi pada larva BSF akan menyebabkan perubahan nilai nutrient yang menjadi utama yaitu protein karena mengalami denaturasi. Dalam penelitian ini akan dilakukan pengeringan menggunakan oven dengan tujuan mengetahui kondisi optimum terhadap penggunaan suhu dan lama waktu agar dihasilkan rendemen, kadar lemak kasar dan kadar protein kasar yang baik. Dalam penelitian ini digunakan metode Response Surface Methodology (RSM) dengan rancangan Central Composite Design (CCD). Penelitian ini menggunakan dua faktor yakni suhu pengeringan sebesar 600C 700C 800C dan lama waktu pengeringan sebesar 12 jam, 18 jam, dan 24 jam. Variabel respon yang diukur adalah kadar lemak kasar dan kadar protein kasar. Hasil penelitian menunjukkan suhu dan lama waktu pengeringan mempunyai pengaruh yang signifikan terhadap rendemen larva BSF. Semakin tinggi suhu dan waktu pengeringan maka akan semakin rendah nilai rendemen larva BSF. Suhu pengeringan mempunyai pengaruh yang signifikan terhadap kadar lemak kasar dan kadar protein kasar. Semakin tinggi suhu pengeringan yang digunakan maka kadar lemak kasar yang dihasilkan semakin besar dan sebaliknya kadar protein kasar semakin rendah. Solusi optimal dihasilkan dari level perlakuan dengan lama pengeringan 720C dengan lama waktu 12 jam. Hasil prediksi solusi optimal respon rendemen sebesar 26,23%, kadar lemak kasar sebesar 32,25% dan kadar protein kasar sebesar 25,26%. Hasil aktual yang dihasilkan dari validasi data masing-masing respon sebesar 24,12%, 34,12% dan 24, 16%.
English Abstract
Black soldier fly larvae is a fruit insect that has the Latin name Hermetia illuciens L. It belongs to the family of flies (Diptera family). The life cycle of BSF is divided into four phases, namely egg, larva, pupa and adult. The fat content in BSF larvae reached 20-29% and the protein content in BSF larvae was 42%. The drying process with temperatures that are too high in BSF larvae will cause changes in the value of the main nutrient, namely protein because it is denatured. In this study, drying will be carried out using an oven with the aim of knowing the optimum conditions for the use of temperature and length of time in order to produce good yields, crude fat content and crude protein content. In this study, the Response Surface Methodology (RSM) method was used with a Central Composite Design (CCD) design. This study used two factors, namely the drying temperature of 600C 700C 800C and the drying time of 12 hours, 18 hours, and 24 hours. Response variables measured were crude fat content and crude protein content. The results showed that the temperature and drying time had a significant effect on the yield of BSF larvae. The higher the temperature and drying time, the lower the yield value of BSF larvae. Drying temperature has a significant effect on crude fat content and crude protein content. The higher the drying temperature used, the higher the crude fat content and the lower the crude protein content. The optimal solution resulted from the treatment level with a drying time of 700C for 12 hours. Prediction results of optimal solution yield response of 25.94%, crude fat content of 32.24% and crude protein content of 25.02%. The actual results generated from the data validation of each response were 24.12%, 34.12% and 24, 16%.
