Abstract
Susu di Indonesia memiliki potensi sangat besar disebabkan banyak diversifikasi produk ditemukan di pasaran. Susu memiliki kandungan gizi yang berguna bagi tubuh manusia, diantaranya protein, asam lemak esensial, vitamin dan mineral. Kandungan yang terdapat pada susu mudah rusak sehingga susu disimpan pada suhu rendah untuk menghambat pertumbuhan mikroorganisme. PT XYZ adalah salah satu industri pengolahan susu berlokasi di Jawa Timur. PT XYZ memberikan perlakuan ice water system jenis geagrasso pada susu menggunakan water chiller agar kerusakan susu dapat diminimalisasi. Ice water system atau biasanya juga disebut chiller merupakan mesin refrigerasi yang memiliki fungsi utama mendinginkan air pada sisi evaporatornya. Salah satu jenis susu yang diberi perlakuan water chiller yaitu susu liquid. Tujuan dari penelitian adalah menentukan kapabilitas proses pada mesin chiller pada tahun 2020, melakukan analisis titik kritis kegagalan mesin chiller, dan menentukan usulan perbaikan untuk minimalisasi tingkat kegagalan. Perhitungan analisis kapabilitas proses menggunakan indeks kapabilitas. Data yang digunakan merupakan data sekunder yang diperoleh dari form departemen engineering bulan Januari 2020 – Desember 2020. Metode yang digunakan untuk analisis titik kritis kegagalan mesin chiller yaitu Failure Modes Effects Criticality Analysis (FMECA). FMECA digunakan untuk mengidentifikasi kegagalan dari indeks kapabilitas yang tidak capable, dengan cara pemberian nilai prioritas berdasarkan severity (tingkat keparahan), occurance (tingkat kejadian), dan detection (tingkat deteksi). Nilai prioritas diberikan oleh 3 pakar di bidangnya yaitu manager, supervisor, dan operator. Berdasarkan pendekatan DMAI, ditemukan kegagalan yang sering terjadi pada mesin chiller yaitu siklus refrigeran terhenti, refrigeran kurang atau berlebih, pelumas oli, dan katup ekspansi. Parameter yang dianalisis yaitu suction p, suction t, discharge p, discharge t, dan slide valve. Hasil analisis kapabilitas proses yang menghasilkan proses kapabel hanya pada parameter suction p untuk indeks pp dan parameter discharge p dan discharge t untuk indeks kapabilitas ppk. Identifikasi titik kritis berdasarkan FMECA kerusakan kompresor (F1), tekanan di luar batas kendali (F6), kebocoran atau kurangnya refrigeran (F2), kurangnya air kondensor (F3), kerusakan katup ekspansi (F4), kurangnya air evaporator (F7), dan volume oli tidak sesuai (F5). Usulan perbaikan sebagai upaya kinerja mesin chiller lebih optimal yaitu preventive maintenance berupa jadwal maintenance secara berkala, pengoperasian sesuai SOP.
English Abstract
Dairy milk in Indonesia has enormous potential due to the many diversification of products found in the market. Milk contains nutrients that are useful for the human body, including protein, essential fatty acids, vitamins and minerals. The content contained in milk is easily damaged so that milk is stored at low temperatures to inhibit the growth of microorganisms. PT XYZ is a dairy processing industry located in East Java. PT XYZ provides geagrasso type ice water system treatment on milk using a water chiller so that milk damage can be minimized. Ice water system or usually also called chiller is a refrigeration machine that has the main function of cooling water on the side of the evaporator. One type of milk that is treated with water chiller is liquid milk. The purpose of the research is to determine the process capability of the chiller machine in 2020, analyze the critical point of failure of the chiller machine, and determine the proposed improvement to minimize the failure rate. Calculation of process capability analysis using the capability index. The data used is secondary data obtained from the engineering department form in January 2020 – December 2020. The method used to analyze the critical point of failure of the chiller machine is Failure Modes Effects Criticality Analysis (FMECA). FMECA is used to identify failures from the incapable capability index, by giving priority values based on severity, occurrence, and detection. Priority values are given by 3 experts in their fields, namely manager, supervisor, and operator. Based on the DMAI approach, it was found that the failures that often occur in the chiller machine are the refrigerant cycle stops, the refrigerant is lacking or excess, lubricating oil, and expansion valve. The parameters analyzed were suction p, suction t, discharge p, discharge t, and slide valve. The results of the process capability analysis that resulted in a capable process were only on the suction p parameter for the pp index and the discharge p and discharge t parameters for the ppk capability index. Identification of critical points based on FMECA compressor failure (F1), pressure outside the control limit (F6), refrigerant leakage or lack (F2), lack of condenser water (F3), expansion valve failure (F4), lack of evaporator water (F7), and Incorrect oil volume (F5). Proposed improvements as an effort to optimize the performance of the chiller machine, namely preventive maintenance in the form of regular maintenance schedules, operating according to SOP.
