Abstract
Limbah makanan yang dihasilkan dari proses pembuatan makanan maupun sisa kegiatan makan yang berhubungan dengan prilaku penjual dan konsumennya. Limbah makanan umumnya berupa seperti sisa makanan, daging, roti, dan potongan buah dan sayuran, kandungan organik limbah makanan dapat menjadi sumber substrat untuk organisme. Inovasi terkini menunjukan bahwa serangga memiliki potensi sebagai sumber protein alternatif.. Alternatif teknologi yang ditawarkan yaitu dengan cara mereduksi sampah menggunakan larva BSF, teknologi reduksi sampah dengan menggunakan BSF merupakan teknologi biodegradasi limbah organik oleh larva BSF dari spesies Hermetia illucens. Metode literatur review yang digunakan yaitu metode scoping review.. Database yang digunakan pada literatur review ini yaitu Google scholar, ProQuest, dan Science Direct. Total keseluruhan artikel ilmiah yang diperoleh sebanyak 2278 judul artikel, kemudian dilakukan tahap duplikasi 1 ditersisa 435, setelah itu tahap duplikasi 2 tersisa 433. Hasil screening diperoleh 17 artikel yang sesuai syarat, kemudian dilakukan screening kembali berdasarkan syarat inklusi dan diperoleh hasil final 8 artikel ilmiah. Hasil review menunjukan bahwa sumber limbah mempengaruhi karakteristik dan nutrisi. Sumber substrat dan nutrisi pada limbah makanan tidak hanya berpengaruh pada pertumbuhan dan produktivitas larva BSF, juga pada kandungan protein larva BSF. Hasil review juga menunjukan bahwa kandungan protein pada substrat pakan berkontribusi pada kandungan protein larva BSF. Semakin tinggi protein pada substrat selaras dengan tingkat protein pada larva BSF.
English Abstract
Food waste generated from the process of making food and the rest of eating activities related to the behavior of sellers and consumers. Food waste is generally in the form of food scraps, meat, bread, and pieces of fruit and vegetables, the organic content of food waste can be a source of substrate for organisms. Recent innovations show that insects have the potential as an alternative protein source. The alternative technology offered is by reducing waste using BSF larvae, waste reduction technology using BSF is a technology for biodegradation of organic waste by BSF larvae from the Hermetia illucens species. The literature review method used is the scoping review method. The databases used in this literature review are Google scholar, ProQuest, and Science Direct. The total number of scientific articles obtained was 2278 article titles, then the first duplication stage was carried out, the remaining 435, after that the remaining 433 duplication stage 2. The screening results obtained 17 articles that met the requirements, then re-screened based on the inclusion requirements and obtained the final results of 8 scientific articles . The results of the review show that the source of the waste affects the characteristics and nutrients. Sources of substrate and nutrients in food waste not only affect the growth and productivity of BSF larvae, but also the protein content of BSF larvae. The results of the review also showed that the protein content of the feed substrate contributed to the protein content of BSF larvae. The higher the protein in the substrate was in line with the protein level in BSF larvae.
