Abstract
Berbagai jenis bakso di pasaran memiliki peminat dengan kesukaan dan dominansi atribut sensoris yang beragam. Karakteristik dan intensitas sensori bakso porang dibandingkan dengan bakso pasaran seperti bakso B, bakso C dan bakso D. Tujuan penelitian ini untuk mengetahui adanya perbedaan atribut sensoris dari masing-masing sampel sehingga karakteristik sensoris bakso dapat diketahui berdasarkan prespektif konsumen. Penelitian ini dibagi menjadi dua tahap. Tahap pertama 89 orang dilibatkan dalam survei daring untuk menghimpun atribut yang umumnya dirasakan konsumen saat mengonsumsi bakso.
English Abstract
The various types of meatballs on the market have enthusiasts with various preferences and dominance of sensory attributes. Characteristics and sensory intensity of porang meatball compared to meatballs on the market such as C meatball, B meatballs and D meatballs. The purpose of this study was to determine the differences in sensory attributes of each sample so that the sensory characteristics of meatballs could be identified based on the consumer's perspective. This research is divided into two stages. In the first stage, 89 people were involved in an online survey to collect the attributes that consumers generally feel when consuming meatballs
