Abstract
Porang (Amorphophallus muelleri Blume) merupakan tanaman umbi asli Indonesia yang memiliki nilai ekonomis tinggi karena mengandung glukomanan. Umbi porang umumnya diolah menjadi tepung dan banyak digunakan di industri pangan. Namun, kemurnian glukomanan yang rendah adalah salah satu permasalahan terbesar pada produksi tepung porang. Tingkat kemurnian glukomanan merupakan faktor penting berkaitan dengan sifat fungsional tepung seperti viskositas, solubility dan swelling power. Proses pemurnian lanjutan secara kimiawi dengan pencucian etanol umum digunakan karena mampu meningkatkan kemurnian glukomanan lebih tinggi dibanding metode lain. Namun, metode tersebut memiliki kekurangan yaitu biaya produksi tinggi dan waktu yang relatif lama.
English Abstract
Porang (Amorphophallus muelleri Blume) is an Indonesia native tuber plant. Porang tubers classified as high economical commodities because it’s glucomannan content. Most of porang tubers are processed into flour and widely used in food industry. Degree of glucomannan purity is an important factor related to some functional properties of flour such as viscosity, solubility and swelling power. However, low purity of glucomannan is the main problem during production of porang flour. Further purification process by wet extraction method is widely used to increase glucomannan purity. But, that method has some disadvantages such high production cost and consume much time.
