Abstract
Bisnis pengolahan hasil pertanian semakin memegang peranan penting di Indonesia. Pada tahun 2011, perkembangan jumlah UMKM sektor pertanian di Indonesia memiliki proporsi unit usaha terbesar sejumlah 26.960.465 unit (48,85%). Sektor ini juga memberikan Product Domestic Brutto (PDB) pada tahun 2014 sekitar Rp 879 triliun atau 10,26% dan menyerap tenaga kerja sebanyak 35,7 juta tenaga kerja (Bank Indonesia, 2015). CV Kajeye Food merupakan salah satu UMKM pengolahan keripik buah di Kota Malang. Unit usaha ini memproduksi berbagai jenis keripik buah seperti nangka, apel, mangga, salak, dan semangka. Keripik buah yang paling sering diproduksi karena banyak diminati wisatawan adalah keripik buah apel. Tahapan pembuatan keripik apel dimulai dengan pemilihan/penyortiran buah apel yang kondisinya masih bagus, tahapan berikutnya yaitu pengupasan, dan dilanjutkan dengan perajangan apel. Apel yang telah dirajang kemudian direndam dengan natrium metabisulfit untuk mencegah proses pencoklatan secara enzimatis, tahapan diakhiri dengan penggorengan vakum dan pengemasan keripik.
English Abstract
The agricultural industry is playing an important role in Indonesia. In 2011, the number of micro, small and medium enterprises in the agricultural sector in Indonesia had the largest proportion of business units with 26,960,465 units (48.85%). This sector also provided growth domestic product (GDP) in 2014 around Rp. 879 trillion or 10.26% and absorbed 35.7 million workers (Bank Indonesia, 2015). CV Kajeye Food is one of the micro, small and medium enterprises processing fruit chips in Malang City. This business unit produces various types of fruit chips such as jackfruit, apple, mango, thorny palm, and watermelon. Apple chips are the most commonly produced because tourists love them. The stages of making apple chips begin with sorting the apples that are still in good condition; the next step is peeling and continues with chopping the apples. The chopped apples are then soaked with sodium metabisulfite to prevent the enzymatic browning process, the stage ends with vacuum frying and packing the chips.
