Abstract

Susu sapi memiliki nutrisi sangat baik untuk kesehatan tubuh, namun, susu rentan terhadap cemaran mikroorganisme sehingga perlu adanya jaminan keamanan dan mutu bagi konsumen. Untuk mencegah kontaminasi, perlu perbaikan dan pengawasan mulai dari penerimaan susu segar sampai tahap distribusi. Salah satu industri yang bergerak dalam bidang pengolahan susu sapi adalah CV Cita Nasional yang berada di Getasan, Kab. Semarang, Jawa Tengah. Tujuan penelitian ini adalah memperoleh hasil penilaian penerapan dan penyimpangan GMP dengan form audit checklist and scoring sehingga diketahui tingkat kesesuaian penerapan GMP di CV Cita Nasional. Penelitian ini menggunakan pendekatan GMP (Good Manufacturing Practices). Ruang lingkup GMP pada penelitian ini dibuat berdasarkan Peraturan Menteri Perindustrian Republik Indonesia No. 75 tahun 2010 tentang Pedoman CPPOB (Cara Produksi Pangan Olahan yang Baik). Hasil dari penilaian penyimpangan aspek GMP, didapatkan total 13 penyimpangan minor, 17 penyimpangan mayor, 4 penyimpangan serius, dan tidak terdapat penyimpangan kritis. Hasil tersebut masuk kategori B (Baik) dengan rating II, dimana frekuensi audit internal harus dilakukan setiap 4 bulan sekali. Berdasarkan hasil penilaian penerapan GMP, penilaian dari karyawan sebesar 81,14%; top management sebesar 93,35%; peneliti sebesar 88,65%; serta rata-rata penilaian secara keseluruhan sebesar 87,71% dengan kategori memenuhi. Rekomendasi perbaikan diberikan berdasarkan kategori tingkat penyimpangan GMP

English Abstract

Cow's milk has excellent nutrition for the health of the body, however, milk is vulnerable to microorganism contamination so there needs to be a guarantee of safety and quality for consumers. To prevent contamination, it is necessary to repair and supervise everything from the reception of fresh milk to the distribution stage. One of the industries engaged in the processing of cow's milk is CV Cita Nasional located in Getasan, Semarang, Central Java. The purpose of this research is to obtain the results of assessment of GMP application and deviations with audit checklist and scoring form so that it is known the level of conformity of GMP application in CV Cita Nasional. This research uses GMP (Good Manufacturing Practices) approach. The scope of GMP in this research was made based on Regulation of the Minister of Industry of the Republic of Indonesia No. 75/M-IND/PER/7/2010 on CPPOB Guidelines (How to Produce Good Processed Food). As a result of the assessment of GMP aspect irregularities, there were a total of 13 minor deviations, 17 major deviations, 4 serious irregularities, and no critical deviations. The results fall into category B (Good) with a rating II, where the frequency of internal audits must be carried out every 4 months. Based on the assessment of GMP implementation, employee assessment is 81.14%; top management by 93.35%; researchers by 88.65%; and an overall average rating of 87.71% with category meets. Improvement recommendations are given based on the category of GMP deviation rates
