Abstract

Manajemen rantai pasok berkelanjutan saat ini sudah menjadi salah satu sasaran utama bagi perusahaan dalam meningkatkan daya saingnya. Integrasi aspek berkelanjutan pada rantai pasok dalam menganalisis risiko rantai pasok dapat memberikan hasil yang optimal terutama pada rantai pasok produk pertanian. Salah satu produk pertanian yang dapat dianalisis risiko rantai pasok berkelanjutan adalah keju mozzarella. CV. Narendra Food merupakan UKM yang memproduksi keju mozzarella. Permasalahan yang terjadi pada rantai pasok keju mozzarella yakni keterlambatan pengiriman bahan baku dari supplier, kualitas keju mozzarella yang tidak sesuai, rusaknya kemasan saat pengiriman, dan ketidakpastian permintaan produk keju mozzarella.Tujuan penelitian ini adalah mengidentifikasi risiko rantai pasok berkelanjutan pada keju mozzarella serta memberikan usulan mitigasi risiko rantai pasok berkelanjutan keju mozzarella di CV. Narendra Food. Metode yang digunakan dalam menganalisis risiko dan mitigasi risiko pada rantai pasok berkelanjutan produk keju mozzarella adalah Fuzzy Failure Mode Effect Analysis (Fuzzy FMEA) dan Analytical Hierarchy Process (AHP). Metode Fuzzy FMEA akan menghasilkan nilai FRPN yang akan menunjukkan risiko yang harus diprioritaskan untuk segera dilakukan mitigasi, dan metode Analytical Hierarchy Process (AHP) digunakan untuk menentukan alternatif mitigasi risiko berdasarkan hasil Fuzzy FMEA. Kuesioner penelitian diberikan pada 1 responden pakar pihak supplier, 2 responden pakar pihak CV. Narendra Food dan 1 responden pakar pihak retailer. Hasil yang didapatkan dari penelitian ini adalah pada pihak supplier risiko tertinggi pada aspek teknis yakni keterlambatan waktu pengiriman susu, aspek ekonomi yakni kurangnya jangkauan pasar penjualan, aspek lingkungan yakni adanya penyakit menyerang sapi, dan aspek sosial yakni kurangnya komunikasi diantara pekerja. Risiko tertinggi pada pihak manufacturer aspek teknis yakni kualitas bahan baku yang tidak bagus,aspek sosial yakni kurangnya pengetahuan tenaga kerja tentang kualitas keju mozzarella yang baik, aspek lingkungan yakni kurangnya sanitasi pada area produksi, dan aspek ekonomi yakni tingginya biaya pengiriman produk. Risiko tertinggi pihak retailer aspek teknis yakni peramalan dan perencanaan produk yang tidak tepat, aspek sosial yakni kurangnya ketersediaan tenaga kerja berpengalaman, aspek ekonomi yakni adanya pesaing retailer sejenis, dan aspek lingkungan yakni kurangnya sanitasi pada area penjualan. Hasil AHP diperoleh pada pihak supplier strategi paling prioritas aspek teknis yakni membuat daftar pengiriman susu yang tercatat dengan baik, aspek sosial yakni melakukan kegiatan bonding diantara pekerja, aspek ekonomi yakni menambahkan SDM khusus pemasaran produk, aspek lingkungan yakni memastikan kebersihan dan sanitasi kandang secara berkala, dan aspek berkelanjutan yang paling prioritas adalah aspek ekonomi. Pihak manufacturer strategi paling prioritas aspek teknis yakni memilih supplier yang memiliki kualitas yang baik, aspek sosial yakni melakukan pelatihan pada karyawan dalam pembuatan keju mozzarella dengan kualitas yang benar, aspek ekonomi yakni memilih jasa ekspedisi dengan biaya yang tidak terlalu tinggi, aspek lingkungan yakni melakukan sanitasi pada bahan baku, peralatan dan tenaga kerja, dan aspek berkelanjutan yang paling prioritas adalah aspek teknis. Pihak retailer strategi paling prioritas aspek teknis melakukan peramalan dan perencanaan produk dengan metode matematis, aspek sosial yakni mengadakan pelatihan bagi karyawan, aspek ekonomi yakni melakukan analisis lingkungan eksternal (pesaing retailer sejenis), aspek melakukan sanitasi melakukan pembersihan area penjualan dengan teratur, dan aspek berkelanjutan yang paling prioritas adalah aspek sosial

English Abstract

Sustainable supply chain management has now become one of the main targets for companies in increasing their competitiveness. The integration of sustainable aspects in the supply chain in analyze supply chain risks can provide optimal results, especially in the supply chain of agricultural products. One of the agricultural products that can be analyzed for sustainable supply chain risks is mozzarella cheese. CV. Narendra Food is an SME that produces mozzarella cheese. Problems that occur in the mozzarella cheese supply chain are delays in the delivery of raw materials from suppliers, inappropriate quality of mozzarella cheese, damaged packaging during delivery, and uncertainty in demand for mozzarella cheese products. The purpose of this study was to identify the risk of a sustainable supply chain of mozzarella cheese and mitigation of the risk of sustainable supply chain of mozzarella cheese in CV. Narendra Foods. The methods used in analyzing risk and risk mitigation in the sustainable supply chain of mozzarella cheese products are Fuzzy FMEA (Failure Mode and Effect Analysis) and AHP (Analytical Hierarchy Process). The Method Fuzzy FMEA will give result FRPN value that will indicate the risks that must be prioritized for immediate mitigation, and the Analytical Hierarchy Process (AHP) method is used to determine risk mitigation alternatives based on the results of the Fuzzy FMEA. The research questionnaire was given to 1 expert respondent from supplier, 2 expert respondents on the CV. Narendra Food and 1 expert respondent from the retailer. The results obtained from this study is supplier's the highest risk is on the technical aspect is the delay in milk delivery time, the economic aspect is the lack of reach of the sales market, the environmental aspect is the presence of diseases that attack cows, and the social aspect is the lack of communication between workers. The highest risk in manufacturer at the technical aspect is the quality of raw materials is not good, the social aspect is the lack of knowledge of the workforce about good quality mozzarella cheese, the environmental aspect is the lack of sanitation in the production area, and the economic aspect is the high cost of product delivery. The highest risk is the retailer's technical aspect is inappropriate product forecasting and planning, the social aspect is the lack of availability of experienced workers, the economic aspect is the presence of competitors from retailers similar, and the environmental aspect is the lack of sanitation in the sales area. The results of the AHP were obtained at supplier's the most priority strategy was the technical aspect is making a list of milk shipments that were well recorded, the social aspect was conducting bonding activities between workers, the economic aspect was adding special human resources for product marketing, the environmental aspect was ensuring the cleanliness and sanitation of the cage on a regular basis, and the most priority sustainable aspect is the economic aspect. The manufacturer of the strategy has the most priority in the technical aspect is choosing a supplier that has good quality, the social aspect is conducting training on employees in making mozzarella cheese with the right quality, the economic aspect is choosing an expedition service with a cost that is not too high, the environmental aspect is doing sanitation. on raw materials,equipment and labor, and the most priority sustainable aspect is the technical aspect. The retailer strategy prioritizes the technical aspects of forecasting and planning products using mathematical methods, the social aspect is conducting training for employees, the economic aspect is conducting an analysis of the external environment (competitors of retailers similar), the aspect of doing sanitation by cleaning the sales area regularly, and the most priority sustainable aspect is the social aspect
