Abstract

Andaliman merupakan salah satu bumbu masak tradisional etnis Batak, Sumatera Utara. Andaliman bubuk biasanya dikemas dengan menggunakan kemasan plastik. Penelitian ini dilakukan untuk menduga umur simpan andaliman bubuk dengan menggunakan pendekatan kadar air kritis model Labuza. Kurva Isoterm Sorpsi Air (ISA) andaliman bubuk pada suhu 300C ditentukan dengan metode gravimetri dalam kisaran aw antara 0,04 sampai 0,97. Model persamaan Oswin digunakan untuk menggambarkan kurva ISA secara tepat. Kadar air kritis ditentukan dengan uji organoleptik dengan parameter penggumpalan sebagai penentu tingkat kerusakan. Andaliman bubuk dengan kemasan Polypropylene yang disimpan pada suhu 300C dengan RH 75%, 80% dan 85% memiliki umur simpan berturut-turut yaitu 13,5 bulan, 5,9 bulan, dan 3,3 bulan. Sedangkan andaliman bubuk dengan kemasan High Density Polyethylene disimpan pada suhu 300C dan RH 75%, 80% dan 85% memiliki umur simpan berturut-turut yaitu 25 bulan, 11 bulan, dan 6,1 bulan.

English Abstract

Andaliman is one of the traditional spices ethnic Bataks, North Sumatra. Andaliman powder usually packaged in plastic film for retailing. The aim of this research was to determine shelf life of andaliman powder by using a critical moisture content approach model Labuza. Moisture adsorption isotherm of andaliman powder at 300C was determined by static gravimetric method over a wide range of water activity , i.e., from 0,04 to 0,97. The obtained moisture adsorption isotherm curve was expressed by employing Oswin equation. The critical moisture content obtained by organoleptic with caking. Andaliman powder packaged in Polypropylene stored at 300C with 75%, 80% and 85% of RH had shelf life of 13,5 months, 5,9 months and 3,3 months respectively. But andaliman powder packaged in High Density Polyethylene stored at 300C with 75%, 80% and 85% of RH had shelf life of 25 months, 11 months and 6,1 months respectively.
