Abstract
Spray drying digunakan sebagai metode enkapsulasi dalam pelestarian kultur probiotik untuk meningkatkan stabilitas dan viabilitas dalam penggunaannya sebagai suplemen pakan ternak. Penggunaan maltodekstrin sebagai enkapsulan dikombinasikan dengan gum Arab dan CMC untuk meningkatkan kualitas mikrokapsul probiotik yang dihasilkan. Enkapsulan dilarutkan dalam larutan probiotik Lactobacillus plantarum dan pengeringan dilakukan dalam spray dryer skala pilot plant.
English Abstract
Spray drying was used as an encapsulating method for preservation of probiotic cultures to enhance its stability and viability as feed supplements in animal production. Partial replacement of maltodextrin, as encapsulant, with gum Arabic and CMC were done to improve the quality of microcapsules. The encapsulating agents were suspended with Lactobacillus plantarum and drying was carried out in a pilot-plant spray dryer.
