Abstract

Metode pengukuran jumlah sisa makanan banyak dikembangkan akhir akhir ini untuk monitoring dan evaluasi sisa makanan di rumah sakit. Pemilihan metode pengukuran disesuaikan dengan kemampuan pengukur dan ketersediaan alat, karena hal tersebut akan mempengaruhi pengukuran. Tujuan dari penelitian ini adalah untuk membandingkan jumlah sisa makanan pasien antara metode comstock dan fotografi di Rumah Sakit Tentara dr. Soepraoen Malang. Penelitian kuantitatif ini menggunakan objek penelitian yang memenuhi kriteria inklusi sebanyak 98 porsi yang terdiri dari makanan pokok (nasi dan nasi tim), lauk hewani, lauk nabati dan sayur. Metode visual comstock yaitu membandingkan makanan sebelum disajikan dengan sisa makanan sesudah disajikan. Metode fotografi yaitu memfoto makanan sebelum disajikan dan sisa makanan sesudah disajikan lalu membandingkannya dilain hari. Pengkategorian sisa makanan menggunakan comstock 7 skala. Penelitian dilakukan selama 20 hari dengan sampel diambil menggunakan metode randomisasi acak. Hasil dari penelitian ini diuji menggunakan uji Wilcoxon signed rank test (p>0,05) yang menunjukkan tidak adanya perbedaan sisa makanan pokok (nasi)(p= 0, 206), lauk hewani (p= 0,065), lauk nabati (p= 0,185), sayur (p= 0,071), namun terdapat perbedaan sisa makanan pokok lunak (nasi tim) (p= 0,003) dengan metode visual comstock maupun fotografi. Kesimpulan dari penelitian ini adalah tidak ada perbedaan jumlah sisa makanan dengan metode visual comstock maupun fotografi terhadap jenis makanan pokok nasi, lauk hewani, lauk nabati dan sayur namun terdapat perbedaan pada makanan pokok lunak. Dari hasil penelitian diharapkan dapat dijadikan pertimbangan terkait dengan pemilihan metode yang sesuai dengan keadaan dan kemampuan rumah sakit untuk memperoleh hasil yang valid.

English Abstract

Plate waste measurement methods have been developed recently for monitoring and evaluation of plate waste in hospital. The selection of the measurement method is adjusted to the measurement’s ability and the availability of tools, because of that it will effect the results of measurement. The photographic method has the advantage is the results can be analysed on another day. The purpose of this study was to compare the amount of plate waste from patients between visual comstock and photography methods in dr. Soepraoen Malang. This quantitative research used 98 research objects that met the inclusion criteria consisting of staple foods (rice and steam rice), animal protein, plant based protein and vegetables. The visual comstock method is to compare food before serving with plate waste after serving. The method of photography is to take photos of the food before it is served with the plate waste after it is served and then compare it on another day. Categorization of plate waste using comstock 7 scale. The study was conducted for 20 days with samples taken by random randomization method. The results of this study were tested using the Wilcoxon signed rank test (p > 0,05) which showed no difference in staple food (rice) (p= 0,206), animal protein (p= 0,065), plant based protein (p= 0,185), vegetables (p= 0,071), but there is no difference between soft staple food plate (Steam rice) (p= 0,003) with the visual comstock method and photography. The conclusion of this study is that there is no difference in the measurement of plate waste using the visual comstock method of photography on the types of staple foods of rice, animal protein, plant based protein and vegetables but there are difference in soft staple foods. From the study results are expected to be taken into consideration related to the selection of methods that are appropriate to the circumstances and the ability of the hospital to obtain valid results.
