Abstract
Indonesia cenderung lebih maju dalam sektor pertumbuhan komoditas produk jamur apabila dibandingkan dengan negara lainnya terutama di kawasan Asia. Terdapat 4 provinsi di Indonesia yang merupakan penghasil jamur tiram terbanyak antara lain, Jawa Barat, Jawa Tengah, Yogyakarta, serta Jawa Timur. Pada tahun 2015, provinsi Jawa Barat mampu memproduksi sebanyak 223.051 Kg jamur tiram dengan luas lahan panen sebesar 35.353 M2. Salah satu produk olahan jamur tiram ialah berupa abon. Abon jamur tiram merupakan bahan makanan yang rendah kalori, tinggi protein, vitamin, mineral serta telah diakui sebagai salah satu bahan makanan yang enak dan bergizi. EOQ merupakan sistem pemesanan yang berusaha menyeimbangkan biaya simpan dan biaya pesan suatu persediaan. Penerapan metode EOQ probabilistik mampu menjawab ketidak-pastian pada kondisi persediaan abon jamur tiram di UKM Ailani Food. Hal tersebut didukung dengan adanya kebijakan safety stock (persediaan pengaman) dan reorder point (titik pemesanan kembali). Hasil penelitian menunjukkan dengan adanya penggunaan metode EOQ didapatkan jumlah persediaan abon jamur tiram sebesar 493 Kg, total biaya persediaan sebesar Rp.136.068,-/Kg, frekuensi pemesanan bahan baku sebanyak 7 kali selama 1 tahun atau 7,4 minggu sekali, nilai safety stock sebesar 105,7 Kg, serta nilai reorder point sebesar 137,8 Kg. Pada total biaya persediaan, menurut kebijakan perusahaan diketahui total biaya persediaan yang dihasilkan sebesar Rp.165.606,- sedangkan dengan penggunaan metode EOQ diketahui total biaya persediaan sebesar Rp.136.068,-. Berdasarkan kedua hasil tersebut, selisih total biaya persediaan antara kebijakan perusahaan dan penerapan metode EOQ sebesar Rp.29.538,- atau sebanyak 17%. Dengan demikian, adanya penerapan metode EOQ mampu menghasilkan total biaya persediaan yang jauh lebih optimal dan ekonomis bagi UKM Ailani Food.
English Abstract
Indonesia tends to be more advanced in the mushroom product commodity growth sector when compared to other countries, especially in the Asian region. 4 provinces in Indonesia are the largest producers of oyster mushrooms, among others, West Java, Central Java, Yogyakarta, and East Java. In 2015, the province of West Java was able to produce as much as 223,051 Kg of oyster mushrooms with a harvested area of 35,353 M2. One of the processed products of oyster mushrooms is in the form of abon. Oyster mushroom abon is a low-calorie food ingredient, high protein, vitamins, minerals, and has been recognized as one of the delicious and nutritious food ingredients. EOQ is an ordering system that tries to balance the holding costs and ordering costs of an inventory. The application of the probabilistic EOQ method can answer the uncertainty in the condition of the stock of oyster mushroom abon at UKM Ailani Food. This is supported by the policy of safety stock (safety stock) and reorder point (reorder point). This study aims to analyze the optimal quantity of oyster mushroom abon stock and the minimum total cost of oyster mushroom abon inventory at UKM Ailani Food. This study applies the probabilistic EOQ method to answer the uncertainty in the condition of oyster mushroom abon stock established by safety stock policies and reorder points. The results showed with the use of the EOQ method, the inventory of oyster mushrooms abon was 493 Kg, the total inventory cost was Rp. 136,068, -/Kg, the frequency of ordering raw materials was 7 times for 1 year or 7.4 once a week, the value of safety stock of 105.7 Kg, and the reorder point value of 137.8 Kg. On the total cost of inventory, according to company policy, the total cost of inventory is Rp. 165,606, - while using the EOQ method, it is known that the total cost of inventory is Rp. 136,068, -. Based on these two results, the difference in total inventory costs between the company's policy and the implementation of the EOQ method is Rp.29,538, - or 17%. Thus, the application of the EOQ method can produce a much more optimal and economical total inventory cost.
