Abstract
Kota Batu yang merupakan salah satu kota yang terletak di Provinsi Jawa Timur yang memiliki hasil hortikultura yang melimpah. Produk unggulan hortikultura yang ada di kota Batu adalah buah apel. Apel (Malus sylvestris Mill) merupakan buah yang memiliki berbagai kandungan gizi yang bermanfaat. Pada tahun 2019 hasil produksi buah apel yang ada di kota Batu adalah sebesar 50525 ton. Buah apel menjadi salah satu objek daya tarik bagi kunjungan wisata kota Batu, sehingga buah apel dikembangkan menjadi olahan keripik apel. Salah satu unit usaha yang mengolah buah apel menjadi keripik adalah usaha keripik apel Norokismo. Usaha keripik apel Norokismo merupakan salah satu home industry yang bergerak dibidang agroindustri dengan produk unggulannya yaitu keripik apel norokismo dari buah apel manalagi. Permasalahan yang sering terjadi pada usaha keripik apel Norokismo adalah tidak konsistennya pasokan bahan baku dari supplier, harga bahan baku yang bersifat fluktuatif, adanya keterbatasan supplier, harga produk jadi keripik apel yang berbeda pada setiap kota, penyimpanan bahan baku dan produk jadi yang belum terkendali, pemesanan bahan baku yang belum terjadwal, adanya pengembalian (return) pada bahan baku dan produk keripik apel serta maintenance mesin utama yang belum terjadwal. Sehingga diperlukan beberapa tindakan pada penilaian risiko rantai pasok keripik apel. Tujuan penelitian ini adalah untuk dapat mengidentifikasi dan menilai risiko yang terjadi pada setiap aktivitas rantai pasok keripik apel Norokismo serta dapat menentukan strategi mitigasi risiko yang akan diterapkan. Salah satu penerapan strategi untuk dapat mengurangi setiap risiko yang muncul adalah dengan melakukan penilaian risiko dan strategi mitigasi risiko dengan menggunakan metode House of Risk (HOR). Metode House of Risk (HOR) yang terdiri dari dua fase yaitu HOR fase 1 digunakan untuk mengidentifikasi risiko serta dapat melakukan pengukuran kejadian risiko dan agen risiko. HOR fase 2 digunakan untuk melakukan penanganan risiko atau aksi viii mitigasi pada agen risiko yang terpilih dari fase 1. Adapun manfaat yang diperoleh dari analisis risiko ini untuk dapat mengurangi setiap kejadian risiko yang terjadi dari agen risiko, sehingga nantinya akan diperoleh strategi mitigasi risiko yang tepat terhadap rantai pasok. Berdasarkan hasil penelitian risiko rantai pasok pada usaha Norokismo yang bergerak dibidang pengolahan keripik apel yaitu terdapat 36 setiap kejadian risiko dan 33 agen risiko dengan agen prioritas yang terpilih sebanyak 2 agen. Agen yang dilakukan penanganan pada keripik apel usaha Norokismo yaitu buah apel yang bersifat musiman (A4) dan Kondisi pasar atau tingkat konsumen yang berubah-ubah (A23). Pada strategi mitigasi risiko rantai pasok keripik buah apel di usaha Norokismo terdapat sebanyak 6 strategi penanganan yaitu pada buah apel yang bersifat musiman (A4) dengan strategi penanganan penambahan jaringan supplier atau pemasok (PA1), melakukan pengendalian persediaan bahan baku (PA2), melakukan bersifat safety stock pada bahan baku buah apel (PA3), memperluas wilayah kebun (PA4). Agen penyebab risiko yang kedua dengan kondisi pasar atau tingkat konsumen yang berubah-ubah (A23). Adapun penerapan strategi yang dibuat yaitu pemetaan permintaan pasar (PA5) dan menambah jaringan pemasaran produk penjualan (PA6)
English Abstract
Batu city is one of the cities located in East Java Province which has abundant horticultural result. Horticultural superior products in the Batu city is apples. Apple is a fruit that has a variety of benefical. In 2019 the production of apples in batu city was 50525 ton. Fruit apple become one of the attractiveness for batu city tourism visit, so fruit apples are developed into processed apple chips. One of the business unit that process fruit apple into chips is the business of apple chips norokismo. Norokismo apple chips business is one of the home industry engaged in agroindustry with superios product is apple chips Norokismo from manalagi fruit apples. The problems often occur in the business of apple chips Norokismo is the inconsistent supply of raw materials from supplier, the price of raw materials are volatile, the limitations of supplier, the price of apple chips finished products are different in each city, storage of raw materials and finished products that have not been controlled, ordering uscheduled raw materials, there is return on raw materials and apple chips product and maintenance of the main machine that has not been scheduled. So that, it is necessary to take action to assess the risk of spply chain apple chips. The purpose of this study is to be able to identify and assess the risks that occur in each supply chain activity of apple Norokismo chips as well as determine the risk of mitigation strategies that must be applied One of the implementations of strategies to reduce the risks that arise is to conduct risk asseessments and risk mitigation strategies using the House Of Risk (HOR) method. House Of Risk (HOR) method consists of two phases that is HOR phase 1 used to identify risks as well as measurement of risk events and risk agents. HOR phase 2 is used for risk management or mitigation action on selected risk agents from phase 1. The benefits obtained from this risk analysis to be able to reduce any risk events that occur from risk agents, so that this risk mitigation will be obtained the right risk mitigation strategy to the supply chain. x Based on the results of supply chain risk research on Norokismo business engaged in processing apple chips, there are 36 risk evenst and 33 risk agents with selected priority agents as many as 2 agents. Agents conducted handling on apple chips Norokismo business is apples that are sesonal (A4) and market conditions or consumer level are fickle (A23). The strategy of risk mitigation supply chain apple chips in the business Norokismo there are as many as 6 handling strategies that are on fruit apples seasonal character (A4) with the strategy of handling the addition a network of suppliers (PA1), controlling the supply of raw materials (PA2), conducting safety stock on apple raw materials (PA3), expanding the garden area (PA4). The second risk causing agent with changing market conditions or fluctuate consumer levels (A23). The implementation of strategy made is mapping market demand (PA5) and adding a network of sales products (PA6).
