Abstract

Kondisi penyimpanan retained sample susu UHT full cream plain 1L di PT. X belum mengevaluasi kesesuaian terhadap kondisi lingkungan penyimpanan susu yang beredar di toko modern. Di samping itu, waktu pengambilan sampel susu UHT full cream plain 1L kurang efisien karena tidak memiliki dasar pengambilan untuk mewakili pada setiap line processing. Tujuan magang ini adalah mengetahui evaluasi kondisi penyimpanan retained sample yang menyesuaikan toko modern dan efisiensi waktu pengambilan sampel susu UHT full cream plain 1L pada setiap line processing. Metode evaluasi kesesuaian kondisi penyimpanan retained sample terdiri dari uji performa menggunakan Rancangan Acak Lengkap 2 Faktorial dengan faktor pertama tempat penyimpanan dan faktor kedua umur simpan. Parameter yang dianalisis berupa pH, warna, dan sedimentasi. Serta pemisahan lemak dan gelasi yang dianalisis secara kualitatif dengan dibandingkan dengan kontrol pembanding dari PT. X. Selanjutnya hasil uji performa di korelasi dengan pearson correlation untuk menunjukkan korelasi antara tempat penyimpanan retained sample dan toko modern terhadap nilai uji performa. Uji yang ketiga yaitu organoleptic menggunakan metode difference from control (DFC) pada atribut rasa dan warna. Metode efisiensi waktu pengambilan terdiri dari uji fisikokimia menggunakan Rancangan Split-plot dengan faktor utama line processing dan faktor kedua waktu pengambilan. Parameter yang diuji diantaranya kadar protein, kadar lemak, total padatan, pH, berat jenis, dan stabilitas susu (metode uji alkohol). Seluruh rancangan dianalisis menggunakan Analysis of Variance (ANOVA) pada taraf kepercayaan 95%, dilanjutkan uji lanjut dengan DMRT jika terjadi interaksi antar kedua faktor. Berdasarkan tujuan dan hasil penelitian yang telah dilakukan, maka didapati uji korelasi metode pearson correlation pada susu UHT full cream plain 1L menunjukkan hasil uji performa retained sample berkorelasi positif dengan toko modern. Dengan kata lain, positif korelasi yang dihasilkan dari hasil uji performa antara tempat penyimpanan menunjukkan kondisi lingkungan antara kedua tempat penyimpanan representatif. Selain itu, tidak terdapat perbedaan rasa dan aroma pada susu UHT full cream plain 1L di tempat penyimpanan retained sample dengan toko modern (p-value > 0,05). Sehingga disimpulkan kondisi lingkungan tempat penyimpanan retained sample merepresentasi kondisi lingkungan di toko modern. Pada uji efisiensi waktu pengambilan sampel susu UHT full cream plain 1L dihasilkan tidak terdapat interaksi antara faktor line processing dengan waktu pengambilan terhadap hasil uji fisikokimia (p-value > 0,05). Hal ini membuktikan bahwa waktu pengambilan sampel susu UHT full cream plain 1L agar mewakili waktu produksi di setiap line processing efisien

English Abstract

The storage conditions of retained samples 1L UHT full cream plain milk at PT. X have not evaluated the suitability of the environmental conditions of milk storage that are circulating in modern stores. Moreover, the sampling time of UHT milk for retained samples is less efficient because it does not have a basis for representing each line processing. The purpose of this internship is to know the evaluation of retained sample storage conditions that reflect modern stores and time efficiency of UHT milk sampling at each processing line. The methods for evaluating the suitability of retained sample storage conditions consist of performance tests using a 2 factorial Complete Randomized Design with the main factor storage area and the second factor shelf life. Parameters analyzed were pH, color and sedimentation. Fat separation and gelation were analyzed qualitatively by comparison with comparative controls from PT. X. Furthermore, the results of performance tests are correlated with Pearson correlation to show the correlation between retained sample storage and modern stores on the value of performance tests. The third test is organoleptic using the Difference From Control (DFC) method on the taste and color attributes. The method of time sampling efficiency consists of physicochemical tests using a Split- plot design with the main factor line processing and the sub factor sampling time. The parameters tested include protein content, fat content, total solids, pH, specific gravity, and milk stability (alcohol test method). The entire design was analyzed using Analysis of Variance (ANOVA) at a 95% confidence level, followed by further tests with DMRT if there was an interaction between the two factors. Based on the aims and results of the research that has been done, the correlation test using Pearson correlation method found in full 1L plain cream UHT milk shows that the results of the retained sample performance test are positively correlated with modern stores. In other words, the positive correlation resulting from the results of the performance test between the storage areas shows the environmental conditions between the two representative storage areas. In addition, there was no difference in taste and aroma in full 1L plain cream UHT milk in a retained sample storage area with a modern store (p-value> 0.05). So, it can be concluded that the environmental conditions where retained samples are stored represent the environmental conditions in modern stores. For time efficiency test of full cream plain 1L UHT milk sampling, there was no interaction between line processing factors and the taking time of the physicochemical test results (p- value > 0,05). This proves that the sampling time of full cream plain UHT milk in order to represent the production time in each processing line is efficient.
