Abstract
Susu segar merupakan komoditas pangan dengan tingkat produksi di Indonesia pada tahun 2017 menurut data BPS mencapai 909.368 ton. Tingkat produksi yang tinggi, menjadikan banyak pelaku usaha mengolah susu segar untuk meningkatkan nilai jualnya. Salah satu produsen yang mengolah susu segar ialah PT. Ultrajaya Milk Industry. PT. Ultrajaya Milk Industry memproduksi berbagai jenis susu UHT, salah satunya susu UHT Ultra Milk taro yang baru diluncurkan pada tahun 2018. Produk PT. Ultrajaya Milk Industry didistribusikan ke seluruh wilayah Indonesia, termasuk Malang, Jawa Timur. Namun, usaha susu UHT seiring perjalanan nya semakin banyak pesaing. Sehingga dibutuhkan analisa lebih dalam mengenai preferensi konsumen terhadap produk agar perusahaan dapat memproduksi produk sesuai keinginan konsumen dan dapat bersaing. Penelitian yang dilakukan merupakan penelitian kuantitatif korelasional. Data diolah dengan metode konjoin. Dalam penelitian ini digunakan 4 atribut produk, yaitu atribut rasa dengan 3 level, volume isi dengan 3 level, kandungan lemak dengan 2 level, dan jenis kemasan dengan 2 level. Dari kombinasi level atribut terbentuk 9 stimuli utama. Penelitian dilakukan selama 1 bulan menggunakan 60 responden dari populasi masyarakat kota Malang. Penentuan responden menggunakan metode purposive sampling dengan kriteria responden berusia 17-40 tahun dan telah mengkonsumsi produk minimal 2 kali dalam 1 bulan terakhir. Hasil penelitian menunjukkan tingkat kepentingan atribut dan stimuli susu UHT Ultra Milk rasa Taro yang disukai konsumen. Atribut produk pertama yang dipentingkan konsumen dalam memilih produk ialah rasa (34.44%), lalu volume isi danvii jenis kemasan (27.79%), dan terakhir kandungan lemak (9.97%). Stimuli yang disukai konsumen ialah rasa susu seimbang rasa taro, volume isi 200 ml, kandungan lemak low fat, dan jenis kemasan tetrapack dengan nilai kegunaan total 3.8283. Hasil konjoin tersebut dinyatakan berkorelasi nyata dengan pendapat responden karena memiliki nilai korelasi Kendall Tau positif sebesar 0.889
English Abstract
Fresh milk is a food commodity with a production level in Indonesia based on BPS data in 2017 reachs 909,368 tons. The high level of production makes many producer process fresh milk to increase its selling value. One of the producers that process fresh milk is PT. Ultrajaya Milk Industry. PT. Ultrajaya Milk Industry produces various types of UHT milk, such as Ultra Milk Taro UHT milk that launched in 2018. Products of PT. Ultrajaya Milk Industry are distributed to all region in Indonesia, including Malang, East Java. However, UHT milk business along with its journey has more competitors. So it is needed an analysis of consumer preferences for products so that company can produces products according to consumer preference and can compete with another brand. This research is a quantitative correlational research. Data is processed by the conjoint method. The research variables are 4 product attributes, those are taste attribute with 3 levels, volume with 3 levels, fat content with 2 levels, and type of packaging with 2 levels. From the combination of attribute levels 9 main stimuli are formed. The study was conducted for 1 month using 60 respondents from the population of the Malang city. Determination of respondents using purposive sampling method with the criteria of respondents aged 17-40 years and have consumed the product at least 2 times in the last 1 month. The results showed the importance of the attributes and stimuli of UHT Ultra Milk Taro that consumers prefer. The first product attribute that consumers interested in choosing products is taste (34.44%), then volume and type of packaging (27.79%), and the last is fat content (9.97%). The stimuli favored by consumers is taro balanced milk flavor, 200 ml volume, low fat fatix content, and tetrapack packaging types with a total utility 3,8283. The result of the conjoint was stated to be significantly correlated with the opinion of respondents because it had a positive Kendall Tau correlation value of 0.889.
