Abstract

Di Indonesia tiap tahun produksi buah pinang meningkat. Saat ini, pemanfaatan pinang muda masih terbatas. Salah satu potensi pinang muda yaitu sabutnya. Sabut pinang mengandung selulosa yang tinggi, sehingga berpotensi sebagai bahan pembuat kertas seni. Salah satu inovasi kertas seni yaitu sebagai kertas undangan. Kertas seni serat sabut pinang adalah produk baru yang perlu perbaikan mutu. Saat ini, belum ada standar mutu kertas seni, sehingga perbandingan mutu kertas seni sabut pinang terhadap produk pasaran perlu dilakukan. Tujuan penelitian yaitu menganalisis perbedaan mutu fisik dan sensoris kertas seni serat pinang dan produk pasaran serta memberi alternatif perbaikan proses produksi. Uji perbandingan mutu fisik dan sensoris kertas seni menggunakan metode uji T independen dan U Mann Whitney. Jenis penelitian berupa kuantitatif dengan desain komparatif. Kertas seni merk Lanara Art & Paper dipilih sebagai kertas pembanding karena telah eksis di pasaran sejak 2008. Pengujian variabel fisik (gramatur, ketebalan, kuat tarik, ketahanan sobek dan daya serap) dilakukan pada 30 sampel tiap jenis kertas. Pengujian variabel sensoris (warna, tekstur dan kenampakan serat) melalui uji kesukaan oleh 30 panelis. Instrumen penelitian berupa kuisioner. Panelis terdiri dari karyawan percetakan dan konsumen undangan. Hasil uji perbandingan mutu fisik kertas seni serat sabut pinang dan Lanara Art Paper terdapat perbedaan signfikan (pvalue <0,05) untuk variabel gramatur, ketebalan, ketahanan sobek dan daya serap, sedangkan variabel kuat tarik kertas seni diketahui tidak beda signifikan (p-value>0,05). Hasil uji mutu sensoris kertas seni serat sabut pinang dan Lanara Art Paperviii tidak berbeda signifikan (p-value>0,05) untuk variabel warna, tekstur dan kenampakan serat. Kertas seni sabut pinang lebih unggul dari segi gramatur, ketebalan, ketahanan sobek dan daya serap air, tetapi kuat tarik lebih rendah dan perlu perbaikan. Kelebihan kertas seni sabut pinang yaitu nilai gramatur, ketebalan, ketahanan sobek lebih tinggi serta daya serap lebih rendah, tetapi kuat tarik lebih rendah. Hasil uji sensoris panelis lebih menyukai warna kertas seni pasaran dibanding kertas seni sabut pinang dengan skor 3,9. Panelis juga lebih menyukai tekstur produk pasaran dengan skor 3,63. Pada kenampakan serat, rata– rata skor kesukaan panelis terhadap kedua kertas sama yaitu 3,7. Perbaikan mutu kertas seni sabut pinang diperlukan terkait kuat tarik, warna, dan tekstur. Perbaikan dapat dilakukan melalui peningkatan intesitas kontrol suhu pemasakan dan bleaching. Penentuan intensitas waktu pengadukan saat bleaching dan pengecekan mata pisau alat penggiling serat. Perbaikan metode pencetakkan melalui cara pengepresan pada area datar.

English Abstract

In Indonesia, betel nut production every year is increasing. Now, young betel nut utilization is still limited. One of the potentials of young betel nut on the fiber. The betel fiber contains high cellulose, thus potentially as an art paper making material. One of the innovations of art paper for invitation paper. The art paper of betel nut fiber is a new product that needs quality improvement. Currently, there is no standard of art paper quality, so the comparison quality of betel nut art paper and market products need to be done. The purpose of the research to analyze the physical and sensory quality differences of the betel nut art paper and market products and provide an alternative improvement of production processes. A comparative test of the physical and sensory quality of the art paper using independent T test and U Mann Whitney method. The type of research is quantitative research with comparative research design. Lanara Art & Paper brand chosen as a comparative paper because it has existed on the market since 2008. Physical variables testing (grammage, thickness, tensile strength, tear resistance and absorption) is performed on 30 samples of each type of paper. Sensory variables testing (color, texture and fiber appearance) through a favorite test by 30 panelists. The research instrument used was a questionnaire. Panelists consist of printing employees and invited consumers. The result of the physical comparison test between betel nut art paper and Lanara Art Paper, there are different significant (pvalue < 0.05) of variable grammage, thickness, tear resistance and water absorption, but tensile strength is known to be no significant difference (p-value > 0.05). The results of the sensory comparison test between betel nut art paper and Lanara Art Paper known to be no significant difference (p-value > 0.05) ofx variable color, texture and fiber appearance. Betel nut art paper is superior in terms of grammage, thickness, tear resistance and water absorption, but lower on tensile strength. The advantages of betel nut art paper are grammage, thickness, tear resistance value higher and water absorption lower, but tensile strength is lower and needs improvement. In the sensory test, panelists prefer the color of the market art paper compared to the betel nut art paper with a score of 3,9. Panelist also prefers the texture of market products with a score of 3,63. On fiber appearance, the average panelist preference score for both papers is 3,7, which is the same. The quality improvement of the betel nut art paper should be done in tensile strength, color, and texture. Improvement can be made through increased intensity of the temperature control of the delignification and bleaching.
