Abstract
Tujuan penelitian ini adalah memprediksi umur simpan sirup maltitol. Penentuan umur simpan sirup maltitol menggunakan metodeASLT dengan pendekatan Arrhenius dilakukan menggunakan tiga suhu penyimpanan yang berbeda yaitu 30 0C, 40 0C, dan 50 0C. Selama penyimpanan, sirup maltitol yang dikemas dalam botol plastik HDPE mengalami penurunan nilai pH dan L (tingkat kecerahan). Nilai chromadan gula pereduksi sirup maltitol mengalami peningkatan. Tingkat kejernihan,total padatan terlarut, dan kadar air sirup maltitol cenderung konstan. Berdasarkan hasil penelitian, parameter pH merupakan parameter yang memiliki nilai energi aktivasi paling rendah sehingga perhitungan umur simpannya mengikuti persamaan regresi linear parameter pH dengan orde reaksi satu. Persamaan regresi linear parameter pH sirup maltitol adalah y = - 7.695,833947x + 19,180399.Prediksi umur simpan sirup maltitol pada suhu penyimpanan 300C adalah 183 hari.
English Abstract
This study is aimed to predict the shelf life of maltitol syrup. Shelf life determination of maltitol syrupby the ASLT method with the Arrhenius approach was perfomed using three different storage temperatures 30 0C, 40 0C, dan 50 0C. During storage periode, the pH and L (brightness level) of maltitol syrup that packaged in HDPE plastic bottles have been decreased, but the chroma and reducing sugar of maltitol syrup have been increased. The clarity, total dissolved solids, and water content of the maltitol syrup tend to be constant. Based on the results of the study, the pH parameter is the parameter that has the lowest activation energy value so the shelf life calculation follows the linear regression equation pH parameters by following the reaction order one. The linear regression equation for the pH parameter maltitol syrup is y = -7.695,833947x + 19,180399. The shelf life prediction of maltitol syrup at a storage temperature of 30 0C is 183 days.
