Abstract

Tujuan penelitian ini adalah untuk mengetahui karakteristik kuantitatif karkas dan wholesale cut sapi Brahman cross heifer pada tingkat umur yang berbeda. Jumlah sapi heifer yang digunakan sebanyak 104 ekor dengan bobot potong antara 450-550 kg. Metode penelitian yang digunakan yaitu studi kasus dengan pemilihan lokasi secara purpose sampling. Pengamatan secara langsung digunakan untuk mendapatkan informasi umur, bobot potong, bobot karkas dan bobot wholesale cut dan bagian-bagiannya (primary, secondary dan manufacturing cut). Data yang diperoleh selanjutnya dianalisis dengan analisis variansi (ANOVA), dan apabila terdapat perbedaan yang nyata dilanjutkan dengan uji lanjut beda nyata terkecil (BNT). Hasil penelitian menunjukkan bahwa umur pemotongan memberikan pengaruh yang nyata (P<0,05) terhadap bobot potong, bobot karkas segar dan bobot karkas layu, tapi tidak berpengaruh terhadap persentase karkas dan wholesale cut. Semakin tua umur ternak dan semakin lama ternak dipelihara, maka bobot badannya semakin tinggi sehingga berdampak terhadap bobot potong yang dihasilkan, dan semakin tinggi bobot potong maka semakin tinggi juga bobot karkas yang dihasilkan. Rata-rata bobot potong pada tingkat umur yang berbeda PI0, PI2 dan PI4 (476,19 kg : 478,76 kg : 490,10 kg) dan rata-rata bobot karkas (250,95 kg : 253,85 kg : 259,91 kg). Sedangkan rata-rata persentase karkas heifer pada tingkat umur yang berbeda relatif sama (52,71% : 53,04% : 53,10%). Bobot dan persentase wholesale cut dan bagianbagiannya juga relatif sama. Berdasarkan hasil penelitian dapat disimpulkan bahwa umur pemotongan berpengaruh terhadap bobot potong dan bobot karkas, tetapi tidak terhadap persentase karkas dan bobot wholesale cut. Sapi Brahman cross heifer pada tingkat umur PI4 menghasilkan bobot karkas dan wholesale cut yang optimal

English Abstract

The purpose of this research was to know of characteristic quantitative and wholesale cut Brahman cross cattle at different slaughtered age. The number of cattle was 104 heads heifer with the body weight range between 450-550 kg. Purpose sampling method was applied to the research. A direct observation was done to obtain information about age, body weight, carcass weight and wholesale cut weight and its part (primary, secondary and manufacturing cut). The data were analyzed using Analysis of variance (ANOVA), and if the result are significantly different tested using Least Significance Different (LSD) test method. The result showed that slaughtered age has effect (P<0.05) on slaughter weight, hot carcass and carcass chilled, but not effect on dressing percentage and wholesale cut and its part. The slaughtered age has an impact on the slaughter weight, hot carcass weight and carcass chilled weight. Old age of cattle and the longer the cattle is maintened, the higher the body weight so as will effect to the weight of the slaughter produced, and the higher of the slaughter weight the it would be more high have also that the weight of carcass that is produced. Average of slaughtered weight with at different slaughtered age PI0, PI2 and PI4 (476.19 kg : 478.76 kg : 490.10 kg) and the average of carcass weight (250.95 kg : 253.85 kg : 259.91 kg). Where as average dressing percentage of heifer with the different slaughtered age was relatively similar (52.71% : 53.04% : 53.10%). As well as on the weight and percentage of the wholesale cut and its part also relatively similar. The research concluded that slaughtered age has effect on the slaughter weight and carcass weight but has not effect on the dressing percentage and wholesale cut weight. Heifer of Brahman cross cattle at PI4 slaughtered age-class had an optimal of carcass and wholesale cut weight
