Abstract
Jumlahproduksidagingayambroiler di ProvinsiJawa Barat cenderungmengalamipeningkatansetiaptahunnya. Hal inimengindikasikanbahwakomoditiayambroilermampumembe rikankontribusibagisubsektorpeternakan, khususnyabagipembangunanperekonomiandaerah. Penelitianiniberlokasi di rumahmakan Al-Bait Chicken & Burger PangkalanJati I, Kota Depok mulaitanggal 1 Mei 2018 – 30 Mei 2018. Tujuanpenelitianiniyaitu: (1) Mengetahuialurrantaipasok (supply chain) dagingayambroiler di rumahmakan Al-Bait Chicken & Burger di PangkalanJati, Depok; (2) Mengetahuinilaitambah di peternakanayambroilerhinggarumahmakan Al-Bait Chicken & Burger PangkalanJati, Depok. Metodepengambilansampelyaitumenggunakansampling snowball. Sampling snowballyaitusuatumetodeuntukmengidentifikasi, memilih danviii mengambilsampeldalamsuatujaringanataurantaihubunganyang menerus. Analisis data dilakukandengananalisisrantaipasok (supply chain) dan analisisnilaitambah. Hasil penelitianiniadalahterdapatrantai yang berperanaktifdalamrantaipasokdagingayam broilerhinggakerumahmakan Al-Bait Chicken &Burger : (a) produsenbahanbakupeternak dan (b) peternakayam broiler. Aliranprodukdalamrantaipasok pada penelitianiniyaituberupadagingayambroiler. Aliraninformasidalamrantaipasokdagingayam broiler di rumahmakanyaitualiraninformasisecara horizontal yang terjadi pada peternakayam broiler, pemotong, rumahproduksi, dan rumahmakan .Alirankeuangandalamrantaipasokdagingayam broiler di rumahmakanmenjadisatumacamalirandimanadalamalirankeua ngantersebutsistemtransaksipembayaran yang digunakanselama proses distribusisangatmempengeruhikinerjadarisetiapmatarantai, hargasuatuproduk pada tiaprantai. Metode yang digunakanuntukmengukurbesarnyanilaitambahdari proses awalpemotongandagingayambroilersampaiketangankosumena khiryaitumenggunakanrumusperhitungannilaitambahdarimeto de Hayami. Terdapatnilaitambahdalamsatubulan di setiappeternakayam broiler, pemotong, rumahproduksi dan di rumahmakan Al-Bait Chicken & Burger. Pada peternakayam broilermemilikinilaitambahRp 12.136,11/bobothidupdenganrasio 38,53%, pemotongmemilikinilaitambahRp 13.435,47/karkasdenganrasio 29,53%, rumahproduksimemilikinilaitambahRpix 4.460,07/karkasdengannilaitambah 7,53% dan rumahmakan Al-Bait Chicken & Burger memilikinilaitambahuntukdagingayampahaatas dan dada Rp 1.649,07 denganrasio 16,49%, pahabawahRp 649,07 denganrasio 7,21%, dan sayapRp 149,07 denganrasio 1,75%.
English Abstract
The purpose of this research was to figured out the supply chain process of broiler meat from broiler farmer to AlBait Chicken and Burger Restaurant PangkalanJati, Depok. The material of this research was broiler meat supply chain at Al-Bait Restaurant. The method used in the research was snowball sampling. The data analysis used was qualitative descriptive supply chain analysis and value added analysis. The results showed that the supply chain of broiler meat started from farmers, chicken slaughterhouse, production house, to the Al-Bait Restaurant. The value added in the Sugik farm was IDR 1,636.11/LW with ratio 7.79%. The value added in the chicken slaughterhouse was IDR 2,935.35/carcassvi with ratio 8.38%. The value-added in the production house is IDR 4,460.07/carcass with ratio 7.53%. The ratio of value added in the restaurants for upper thigh and breast was IDR 1,649.07/menu with ratio 16.49%, drumstick was IDR 649.07/menu with ratio 7.21% and wing added value was IDR 149.07/menu with ratio 1.75%.
