Abstract

CV. Ailani Food merupakan Usaha Kecil Menengah (UKM) yang memproduksi makanan-makanan, seperti abon yang terbuat dari bahan dasar jamur tiram, granola, fruit chips, dan dailee smoothies. Untuk memperluas pemasaran produknya, CV. Ailani Food berencana untuk melakukan ekspor produknya namun terkendala dengan tidak adanya dokumen sertifikasi manajemen mutu yang dipersyaratkan pada Permendag Nomor 13/M-DAG/PER/3/2012 tentang Ketentuan Umum di Bidang Ekspor. Sedangkan, sertifikasi manajemen mutu khususnya sertifikasi mutu internasional sangat diperlukan agar produk yang dipasarkan dapat bersaing dengan produk-produk lokal maupun impor yang sejenis lainnya karena semenjak dibentuknya Masyarakat Ekonomi ASEAN (MEA), kompetisi atau persaingan pasar di Indonesia mengalami peningkatan dengan banyaknya produk impor yang mengalir ke Indonesia yang akan mengancam industri lokal. Oleh karena itu, diperlukan sertifikasi sistem manajemen mutu (SMM) intenasional tersebut untuk membantu perusahaan dalam mengurus izin ekspor produk sekaligus agar perusahaan dapat bersaing dengan produk-produk impor sejenis lainnya. Salah satu sertifikasi SMM internasional yang umum dan terkenal adalah ISO 9001 dengan seri terbarunya, yaitu ISO 9001:2015. Untuk mendapatkan sertifikasi ISO:9001:2015 tersebut, CV. Ailani Food harus menerapakan sistem manajemen mutunya sesuai dengan persyaratan ISO tersebut. Meskipun sudah berdiri selama 7 tahun, CV. Ailani Food sampai saat ini masih belum memiliki SMM yang terstruktur. Oleh karena itu, diperlukan analisis pada SMM yang dijalankan saat ini untuk membandingkan kondisi SMM yang dilakukan CV. Ailani Food pada saat ini dengan klausul-klausul ISO 9001:2015 dengan menggunakan Gap Analysis atau Analisis Kesenjangan. GAP Analysis dilakukan dengan melakukan wawancara berdasarkan checklist klausul ISO 9001:2015 kepada pihak yang memahami SMM CV. Ailani Food, yaitu Direktur CV. Ailani Food untuk memberikan penilaian dan mengidentifikasi temuan-temuan yang ada. Berdasarkan analisis gap tersebut, dapat disimpulkan bahwa penerapan sistem manajemen mutu yang dijakankan oleh CV. Ailani Food masih belum memenuhi persyaratan-persyaratan dari setiap klausul yang ada pada ISO 9001:2015 dengan hasil presentase penilaian penerapan sebesar 65% untuk klausul 4, 80% untuk klausuk 5, 67% untuk klausul 6, 67% untuk klausul 7, 69% untuk klausul 8, 45% untuk klausul 9, dan 60% untuk klausul 10. Oleh karena itu, dibuat rancangan-rancangan perbaikan untuk menghilangkan temuan-temuan dari setiap klausul yang menyebabkan tidak terpenuhinya persyaratan-persyaratan pada setiap klausul tersebut. Rancangan perbaikan yang diberikan berupa dokumen-dokumen yang diperlukan pada setiap klausulnya mulai dari dokumen level 1 hingga dokumen level 4 (Manual Mutu, Prosedur Mutu, Instruksi Kerja, dan Formulir Mutu) beserta tindakan-tindakan lain yang sebaiknya dilakukan oleh perusahaan untuk mencapai ISO 9001:2015.

English Abstract

CV. Ailani Food is Small and Medium Enterprises (SMEs) that produces foods, such as mushroom ‘abon’, granola, fruit chips, and dailee smoothies. To expand their product marketing, CV. Ailani Food plans to export their products but was constrained by the absence of quality management certification document which was required by Ministry of Trade regulations Number 13/M-DAG/PER/3/2012 about General Provisions in the Export Sector. Meanwhile, the quality management certification, especially for the international quality management certification, is necessary so their products can compete with other local and imported products because since the establishment of ASEAN Economic Community (AEC), market competition in Indonesia has increased due to the number of imported products sold in Indonesia which could threaten local industries. Therefore, international Quality Management Certification (QMS) is necessary for the company to receive the permission to export their products and so that the company can compete with other similar imported products. One of the most popular and renowned international QMS certification is ISO 9001 with its newest series, ISO 9001: 2015.To achieve the certification of ISO 9001: 2015, CV. Ailani Food must implement their quality management system in accordance with ISO requirements. Although it has been established for 7 years, CV. Ailani Food still does not have a systematic QMS. Therefore, an analysis of current QMS condition is required to compare the current QMS conditions performed by CV. Ailani Food based on the clauses of ISO 9001: 2015 by using Gap Analysis. GAP Analysis is done by conducting interviews based on ISO 9001: 2015 clause checklists with the company party who completely understands the implementation of QMS in CV. Ailani Food, the Director of CV. Ailani Food, to assess and identify the gaps. Based on the gap analysis, it can be concluded that the implementation of quality management system in CV. Ailani Food still does not fulfill the requirements of each clause in ISO 9001: 2015. The result of the implementation assessment are 65% for clause 4, 80% for clause 5, 67% for clause 6, 67% for clause 7, 69% for clauses 8, 45% for clause 9, and 60% for clause 10. Therefore, several improvement designs are made to eliminate the gaps of each clause which cause the non-fulfillment of the requirements in each clause of ISO 9001:2015. The improvement designs given in this research are documents required in each clause which are Quality Manual, Quality Procedures, Work Instructions, and Quality Form, along with other actions or programs that should be done by the company to achieve ISO 9001:2015 certification.
