Abstract

Gula mempunyai peranan penting dalam sistem pangan manusia sebagai penyedia rasa manis dan pemasok kalori bagi tubuh. Produksi gula pasir nasional pada tahun 2016 sebesar 2,72 juta ton, dimana konsumsi langsung rumah tangga sebesar 2,83 juta ton menunjukkan produksi gula nasional belum mampu memenuhi kebutuhan masyarakat. Oleh karena itu pemerintah mulai mengimpor gula yang menyebabkan kualitas gula nasional kurang mampu bersaing dengan gula impor. PG. Rejo Agung Baru merupakan salah satu perusahaan nasional yang memproduksi gula dengan kendala kualitas warna kristal gula belum memenuhi SNI dan hasil produksi gula tidak maksimal akibat kegagalan proses. Tujuan penelitian ini adalah untuk mengidentifikasi risiko kegagalan dalam proses produksi gula dan akar penyebab timbulnya risiko tersebut. Metode yang digunakan adalah Fuzzy Failure Mode and Effect Analysis (FMEA) dan Fault Tree Analysis (FTA). Perhitungan metode FMEA menghasilkan FPRN tiga tertinggi yaitu risiko proses giling berhenti, proses pemisahan gula kristal dengan larutan stroop tidak efektif dan kualitas bahan baku tidak memenuhi standar. Analisis dengan FTA diketahui akar penyebab masalah yang paling potensial berdasarkan nilai RRW (Risk Reduction Worth) yaitu gangguan kelistrikan dan kurangnya penambahan air siraman pada saat proses pemutaran, posisi tebu menyilang dan minimnya sortasi bahan baku. Perbaikan yang dapat dilakukan adalah dengan melakukan pengawasan dan perawatan mesin sebelum dan selama untuk mengurangi terjadinya gangguan pada mesin produksi sehingga beban listrik menjadi lebih stabil, Melakukan pengawasan dan sanksi terhadap pekerja yang lalai dalam ix menjalankan tugas selama proses produksi, membatasi kapasitas tebu yang masuk ke gilingan dalam sekali giling dan menerapkan sistem sortasi dan pengecekan bahan baku tebu sesuai kriteria MBS (matang, bersih dan segar).

English Abstract

Sugar has an important role in human food system as a provider of sweet taste and calorie suppliers for the body. National sugar production in 2016 was 2.72 million tons, of which 2.83 million tons of domestic direct consumption indicated that national sugar production has not been able to meet the needs of the community. Therefore, the government began to import sugar which causes the quality of national sugar less able to compete with imported sugar. PG. Rejo Agung Baru is one of the national companies that produce sugar with the quality constraints of sugar crystals have not met the SNI and the production of sugar is not maximal due to process failure. The purpose of this study was to identify risk of failure in the process of sugar production and root cause of the risks. Method used is Fuzzy Failure Mode and Effect Analysis (FMEA) and Fault Tree Analysis (FTA). Calculation of FMEA method produces the highest FPRN of three is the risk of milling process stops, the process of separating sugar crystals with stroop solution is not effective and the quality of raw materials does not meet the standards. Analysis with FTA is known to be the root cause of the most potential problem based on RRW (Risk Reduction Worth) value that is electricity disturbance and lack of water spray during rotation process, crossing cane position and lack of raw material sorting. Repairs that can be done is to conduct supervision and maintenance of machinery before and during to reduce the occurrence of interference in the production machine so that the electrical load becomes more stable, Monitoring and sanctions against workers who neglect in carrying out tasks during the production process, limiting the xi capacity of sugar cane into the mill in one milling and apply sorting system and checking sugarcane raw material according to MBS criteria (mature, clean and fresh).
