Abstract

Industri pengolahan susu (IPS) merupakan sektor yang berkembang di Indonesia. Kualitas susu ditentukan berdasar pada kandungan lemak, solid non fat (SNF), total solid (TS), total plate count (TPC) dan kandungan antibiotik. Susu segar dari peternak dikumpulkan di penampungan susu. Susu dari peternakan rakyat mengalami permasalahan dalam tingkat produktivitas dan kualitas yang belum optimal sehingga mempengaruhi pendapatan peternak. Dalam rangka meningkatkan kualitas peternak dan meningkatkan pendapatan, perlu dilakukan pembinaan terhadap peternak yang kurang baik produksinya. Tujuan penelitian ini adalah untuk mengklasterkan peternak berdasar kualitas susu dan mengetahui alternatif perbaikannya. Penelitian ini menggunakan integrasi antara metode Principal Component Analysis (PCA) dan Analisis Klaster. Alternatif perbaikan klaster dicari berdasarkan metode Analytical Hierarchy Process (AHP). PCA digunakan untuk mengidentifikasi variabel yang paling berperan menggambarkan kualitas susu, dilanjutkan dengan pegklasteran peternak. Metode AHP digunakan untuk memberikan prioritas saran perbaikan yang dapat mempengaruhi kualitas susu. Metode AHP menggunakan kuesioner terhadap 6 responden ahli terdiri dari 4 dokter hewan, operator penampungan dan peternak. Hasil PCA diperoleh 3 variabel dari 4 variabel asal. Kontribusi ketiga variabel tersebut adalah lemak 36.8%, total solid (TS) 26% dan protein 23.1%. Ketiga variabel tersebut membentuk proporsi sebesar 85.9%. Pengklasteran berdasar variabel tersebut menghasilkan 3 kelompok peternak. Klaster terbaik dengan anggota 2 peternak, klaster tengah dengan anggota 52 peternak, dan klaster rendah dengan anggota 1 peternak. Klaster 3 merupakan klaster terendah yang mutlak viii perlu diperbaiki. Pengolahan data dengan metode AHP terhadap 9 alternatif perbaikan dipilih 3 alternatif tertinggi. Alternatif perbaikan terbesar berupa penyediaan pakan berkualitas dengan bobot 0.315, penyusunan ransum sebesar 0.2142 dan menjaga kesehatan ternak sebesar 0.1586. Berdasar kondisi peternak, sebagian besar klaster terbentuk telah melakukan alternatif-alternatif sesuai AHP. Klaster 1 telah sepenuhnya menerapkan alternatif-alternatif tersebut. Klaster 2 perlu perbaikan pada alternatif sarana produksi. Klaster 3 perlu perbaikan penyediaan pakan berkualitas, penyusunan ransum, dan sarana produksi.

English Abstract

Milk processing industry is a growing sector in Indonesia. The quality of milk determined based on fat content, solid non-fat (SNF), total solids (TS), total plate count (TPC) and the antibiotic content. Fresh milk from dairy farmers gathered at the Milk Collection Center. Milk from the farm experiencing problems in productivity and quality levels that have not been optimal, thereby affecting the farmers income. In order to improve the quality and increase the income, farmers need to be improved. The goal of this research is clustering farmer based on milk quality and provide alternative improvement. This research using integration Principal Component Analysis (PCA) and Cluster Analysis. Alternative cluster improvements obtained from Analytical Hierarchy Process (AHP). PCA is used to identify the variables that were most responsible to describe the quality of milk, then followed by farmers clustering. AHP method is used to give priority suggestions for improvements that can affect quality of milk. AHP uses a questionnaire toward 6 expert respondent, which consists 4 veterinarians, shelter operator and farmer. PCA results obtained 3 variables of 4 variables origin. Contribution of three variables are fat represent 36.8%, total solids (TS) 26% and protein 23.1%. These three variables form total proportion 85.9%. Clustering based on these variables produce 3 groups of farmers. Best cluster with 2 members of the farmer, the center cluster with 52 member farmers, and lower cluster with 1 member farmers. Cluster 3 is the lowest clusters that absolutely need to be improved. The data processing with AHP method toward 9 alternative resulting 3 alternative improvement. The improvement alternative providing quality feed form 0,315 global weight, the composition of rations form 0.2142 x global weight and maintain the health of livestock form 0.1586 global weight. Based on farmer condition, most of the clusters has made appropriate alternatives from AHP. Cluster 1 has completely implemented these alternatives. Cluster 2 needs improvement on the alternative production facilities. Cluster 3 need to improving the provision of quality feed, feed formulation and production facilities.
