Abstract
Agroindustri merupakan suatu industri yang mengolah bahan baku pertanian menjadi produk yang memiliki nilai tambah. Keterkaitan tersebut menjadi salah satu ciri dari negara berkembang yang strukturnya mengalami transformasi dari ekonomi pertanian menuju industri pertanian. Pengembangan agroindustri merupakan suatu upaya untuk menciptakan lapangan pekerjaan, mengurangi jumlah pengangguran, serta dapat meningkatkan pendapatan para produsen. Hal ini dikarenakan dalam suatu agroindustri terdapat kegiatan pengolahan komoditas pertanian menjadi suatu produk dengan bentuk yang berbeda dengan aslinya (Soekartawi, 2001). Produsen makanan olahan UD. Budi Jaya di Desa Kramat Kecamatan Bangkalan, Kabupaten Bangkalan, Madura, sejak tahun 2008 mampu memproses buah salak menjadi dodol. Pemrosesan buah salak itu mampu meningkatkan nilai tambah salak dibandingkan hanya menjualnya dalam bentuk buah segar. Selain itu, dapat mengatasi penurunan harga jual salak saat berlangsung panen raya. Kabupaten Bangkalan telah lama memiliki sentra tanaman salak yang dibudidayakan oleh masyarakat di beberapa desa. Bila musim panen salak tiba, maka hasil produksinya melimpah ruah bahkan sebagian terbuang percuma karena tidak terjual. Tujuan dari penelitian ini adalah: (1) Menganalisis besarnya biaya, penerimaan dan keuntungan usaha agroindustri dodol salak UD. Budi Jaya Desa Krama,t Kecamatan Bangkalan, Kabupaten Bangkalan; (2) Menganalisis besarnya tingkat kelayakan finansial usaha agroindustri dodol salak UD. Budi Jaya Desa Kramat, Kecamatan Bangkalan, Kabupaten Bangkalan; (3) Mengetahui berapa lama tingkat pengembalian modal awal agroindustri dodol salak UD. Budi Jaya Desa Kramat, Kecamatan Bangkalan, Kabupaten Bangkalan kembali. Pemilihan lokasi ini didasarkan pada pertimbangan bahwa UD. Budi Jaya yang ada di Desa Kramat, Kecamatan Bangkalan, Kabupaten Bangkalan merupakan sentra pengolahan hasil kebun salak yaitu sebagai sentra olahan salak, yaitu dodol salak. Metode penelitian responden adalah dengan metode purposive sampling pada agroindustri olahan salak UD. Budi jaya di Desa Kramat, Kecamatan Bangkalan, Kabupaten Bangkalan. Data yang digunakan dalam penelitian ini adalah data primer dan data sekunder. Teknik pengumpulan data dilakukan dengan wawancara (dengan pihak-pihak yang terkait) dan dokumentasi. Metode analisis data yang digunakan adalah: (1) Analisis biaya; (2) Analisis arus uang tunai; (3) Analisis kelayakan finansial; dan (4) Analisis sensivitas. Hasil analisis arus uang tunai dalam usaha olahan dodol salak di UD. Budi Jaya Desa Kramat, Kecamatan Bangkalan, Kabupaten Bangkalan bahwa Analisis terhadap biaya produksi, penerimaan, dan pendapatan agroindustri dodol salak di Desa Kramat, Kecamatan Bangkalan, Kabupaten Bangkalan menunjukkan bahwa usaha dodol salak dinilai menguntungkan dan diperoleh hasil biaya produksi rata-rata Rp 37.111.417,- per tahun, penerimaan rata-rata sebesar Rp 59.233.333,- per tahun dan pendapatan sebesar rata-rata Rp 22.121.916,- per tahun. Hasil analisis kelayakan finansial usaha dodol salak, bahwa agroindustri dodol salak di Desa Kramat, Kecamatan Bangkalan, Kabupaten Bangkalan pada tingkat suku bunga bank sebesar 14% menunjukkan bahwa usaha dodol salak dinilai layak untuk di usahakan karena diperoleh: NPV sebesar Rp 10.078.447,-, IRR sebesar 15% dan nilai Net B/C sebesar 1,5 . Analisis sensivitas terhadap kenaikan biaya produksi sebesar 30% pada tingkat suku bunga bank 14% dikatakan layak dengan hasil NPV sebesar Rp 5.006.209,-, IRR sebesar 38% dan Net B/C sebesar 1,2. Penurunan penerimaan akibat penurunan jumlah produksi hingga 20% menyebabkan nilai Net B/C 1,2. Sedangkan NPV bernilai positif yaitu sebesar Rp 4.721.130 ,-. Nilai IRR diperoleh sebesar 33%.
English Abstract
Agroindustry is an industry go through agricultural raw materials to be the product that has added value. The relationship has been one of the characteristics of developing countries that its structure undergo a transformation of the farming economy toward agricultural industry. The development of agroindustry is an attempt to create high paying jobs, reduce the unemployment rate, and can increaseproducers revenue. It was because in a agroindustry there are processing activities agricultural commodities into a product with different shapes with the original (Soekartawi, 2001). Processed food manufacturer UD. Budi Jaya, since the year 2008 dodol be able to process the fruit of salak.Fruit processing salak was able to increase the value added salak than just sell it in the form of fresh fruit. In addition, can overcome the decline in the selling price salak when held the harvest.Bangkalan district centers have long cultivated plants having salak by the community in several villages.If the harvest season salak arrived, abundant production and the results of some wasted because not even sold. The purpose of this research are: 1. to analyze the cost of, the reception and business profits agroindustry dodol salak UD. Budi Jaya Village Kramat, Subdistrict Bangkalan, District Bangkalan, 2.to analyse the feasibility of the size of the level of financial business agroindustry dodol salak UD. The analysis of the feasibility of financial business dodol salak, that agroindustry dodol salak in the village Kramat on the level of bank interest rate of 14% shows that business dodol salak considered worthy to try because obtained: NpvRp 10.078.447, irr by 15 percent and the value of net B/C 1.5.Sensitivity analysis to rising production costs by 30 percent in interest rates the bank 14% said to be worthy of with the Npv Rp 5.006.209, Irr at 38 percent and net B/C of 1.2.The decline in revenue resulting from decreased the number of production to 20% to cause the value of net B/C 1.2.While the Npv is a positive value of Rp 4.721.130. Budi Jayaespecially on dodol salak should start do business bookkeeping which includes the selling data, expenditure data businesses and production data to known for certain sales figures, for the import and the expenditure of firm, (2) local governments should give full support to processed agroindustry salak UD. Budi Jaya in the village Kramat.The support of government in the form of some help in terms of capital and trainings to increasing the quality of human resources and management.
