Abstract
Kadmium (Cd) merupakan salah satu logam berat yang dapat mencemari makanan melalui air, udara dan tanah. Kadmium dapat menyebabkan terjadinya kerusakan ginjal dan hati jika terpapar kadmium secara kronis. Bakso daging sapi merupakan kuliner yang banyak diminati di Kota Malang. Kadmium yang ada di udara dapat mencemari bakso daging sapi yang dijual dengan cara berkeliling dan menetap. Bakso yang dijual dengan cara berkeliling dapat beresiko mengandung kadmium lebih tinggi. Tujuan penelitian adalah mengetahui perbedaan cemaran kadmium pada bakso daging sapi yang dijual berkeliling dan menetap di Kota Malang. Sampel yang digunakan berjumlah dua sampel bakso daging sapi dijual berkeliling dan dua sampel bakso yang dijual menetap pada lima kecamatan di Kota Malang. Penelitian ini bersifat deskriptif analitik dengan pendekatan cross sectional. Kandungan kadmium dianalisa menggunakan spektrofotometri dengan pereaksi HNO3 pada panjang gelombang 288/RepM. Hasil penelitian menunjukkan rata - rata kandungan kadmium pada bakso daging sapi yang dijual berkeliling adalah 0,1109 mg/kg dan rata - rata bakso daging sapi dijual menetap 0,1089 mg/kg. Tetapi, dari hasil uji Mann-Whitney menunjukkan p value 0,790 (p > 0,05). Kesimpulan dari penelitian ini bahwa tidak terdapat perbedaan kandungan kadmium pada bakso daging sapi yang dijual berkeliling maupun yang dijual menetap di Kota Malang.
English Abstract
Cadmium (Cd) is one of heavy metals that can contaminate food through water, air and soil. Cadmium can cause kidney and liver damage if it is exposed chronically. Beef meatballs is one of the most favourite cullinary in Malang. Cadmium in the air can contaminate the meatballs which are sold either by peddler or in a stand. The beef meatballs which are sold by peddler can contain higher cadmium. The purpose of the study was to know the difference of cadmium level in beef meatballs which are sold by peddler and in a stand. The samples were two meatballs that were sold by peddler and two meatballs that were sold in stands which locate in five districts in Malang. This research was a descriptive analytic with cross sectional approach. The level of cadmium were analyzed using spectrophotometry with reactant HNO3 at a wavelength of 280/RepM. The results showed that the mean of cadmium level in beef meatballs that were sold by peddler was 0.1109 mg/kg and that were sold in a stand was 0.1089 mg/kg. But, the result of analysis using Mann-Whitney test was p value 0.790 (p > 0.05). The conclusion of this study is there is no difference between cadmium level in beef meatballs which are sold by peddle and cadmium level in beef meatballs sold in stands in Malang.
