Abstract
Faktor lingkungan di luar makanan yang dapat mengkontaminasi makanan diantaranya alat-alat yang digunakan tidak dicuci secara bersih dan benar. Kontaminasi ini dapat mengakibatkan terjadinya keracunan makanan akibat mikroba. Sekolah Dasar Anak Saleh merupakan sekolah yang menyediakan penyelenggaraan makanan bagi peserta didiknya. Proses pencucian piring dilakukan manual oleh peserta didiknya sendiri. Penelitian ini bertujuan mengetahui kualitas mikrobiologi (jumlah mikroba dan cemaran E.coli ) pada air dan piring makan di SD Anak Saleh Malang. Studi Obeservasional dengan sampel 6 air dan 6 piring dilakukan dengan metode TPC untuk mengetahui jumlah mikroba dan metode MPN untuk mengetahui cemaran E.coli. Hasil pemeriksaan sampel air menunjukkan hanya 1 sampel dari 6 yang terdeteksi jumlah mikroba melebihi 100/cm 3 , yaitu 1,3 x 10 2 /cm 3 . Pemeriksaan cemaran E.coli menunjukkan bahwa seluruh sampel air tidak mengandung E.coli. Sampel piring setelah diperiksa menunjukkan bahwa 4 dari 6 sampel terdeteksi jumlah mikroba melebihi 100/cm 3 , yaitu 1,1 x 10 2 hingga 3,0 x 10 2 / cm 3 . Sedangkan untuk pemeriksaan cemaran E.coli , seluruh sampel piring mengandung E.coli. Kesimpulan dari penelitian ini adalah air yang digunakan untuk mencuci piring sebagian besar memenuhi persyaratan air bersih dan aman digunakan untuk mencuci piring, akan tetapi perlu diperhatikan kebersihan kran dan saluran pipanya. Proses pencucian dan praktek mencuci tangan yang dilakukan peserta didik belum baik sehingga pada piring masih mengandung mikroba dan cemaran E.coli melebihi batas.
English Abstract
Environmental factors outside of foods that can contaminate food are tools that are used to clean and not washed properly. This contamination can lead to the onset of food poisoning caused by microbes. Anak Saleh elementary school is a school that provides organization of food and dish-washing process is done manually by the students themselves. This research aims to know the quality of microbiology (number of microbes and impurities E. coli ) on the water and the plate in Anak Saleh Elementary School Malang. This research was obeservasional study with a sample of 6 water and 6 plates was done by the method of TPC to knew the number of microbes and the MPN method to finded out the impurities of E. coli . Water sample inspection results indicated 1 sample of 6 detected microbes amount exceeded 100/cm 3 , which was 1.3 x 10 2 /cm 3 . Examination of the impurities of E. coli showed that all samples water not containing E. coli . Sample plates after a review showed that 4 of the 6 samples detected microbial amount exceeded 100/cm 3 , which was 1.1 x 10 3 up to 3.0 x 10 2 /cm 3 . As for the examination of the impurities of E. coli , the entire sample plates containing E. coli . Conclusion of this research was the water used for washing dishes was mostly satisfies the requirements of clean and safe water but noteworthy hygiened service-pipe lines and faucets. The processed of washing and hand washing practices of students hadnt done well so on the dish still contained impurities and microbe E. coli exceeding the limit.
