Abstract
Formula enteral adalah formula yang diberikan ke saluran pencernaan melalui tube untuk mempertahankan atau memenuhi kebutuhan gizi pasien. Formula enteral yang ada menggunakan telur dan susu dimana keduanya mengandung lemak yang relatif tinggi dan laktosa sehingga tidak dapat diberikan pada penderita laktosa intoleran. Maka pengembangan formula enteral modifikasi substitusi tepung biji kecipir dan tepung jagung perlu dilakukan. Kecipir dan jagung akan saling melengkapi kandungan asam amino lisin maupun asam amino metionin. Selain itu, kualitas minyak jagung yang tinggi akan mengimbangi kualitas minyak kecipir yang rendah. Penelitian ini bertujuan untuk membandingkan kandungan total lemak dan viskositas pada formula enteral dengan substitusi tepung biji kecipir (Psophocarpus tetragonolobus L) dan tepung jagung (Zea mays L) dengan formula enteral standar. Studi eksperimental ini menggunakam Rancangan Acak Lengkap dengan 4 taraf perlakuan dan 5 replikasi. Perlakuan percobaan ini yaitu formula enteral dengan substitusi tepung biji kecipir dan tepung jagung sebesar 0%, 25%:75%, 50%:50%, dan 75%:25%. Hasil penelitian menunjukkan ada perbedaan yang signifikan kandungan lemak (p = 0.000) dan viskositas (p = 0.001) antara formula enteral substitusi tepung biji kecipir dan tepung jagung dengan formula enteral standar rumah sakit. Kadar lemak dan viskositas terbaik pada formula enteral substitusi 50% tepung biji kecipir dan 50% tepung jagung dengan kandungan lemak 16.5% dan viskositas sebesar 180 cP yang mampu melewati pipa karet dengan ukuran 14 Fr dan 16 Fr. Formula enteral substitusi tepung biji kecipir dan tepung jagung dapat digunakan sebagai alternatif formula enteral yang bebas laktosa.
English Abstract
Enteral formula is a formula that is given to the digestive tract through a tube to maintain or meet the nutritional needs of the patient. Existing enteral formula uses eggs and milk which are both relatively high in fat and lactose so it can not be given to people with lactose intolerance. So, the development of modified enteral formula substitution winged bean seed flour and corn flour needs to be done. Winged bean and corn will complement the lysine amino acids and methionine amino acids. In addition, high quality corn oil will offset the low quality of winged bean oil. This study aimed to compare the total fat content and the viscosity of the enteral formula with substitution winged bean seed flour (Psophocarpus tetragonolobus L) and corn flour (Zea mays L) with standard enteral formula. This experimental study using a completely randomized design with 5 treatments and 4 levels of replication. This experimental treatment is enteral formula with flour substitution winged bean seeds and corn flour at 0%, 25%: 75%, 50%: 50%, and 75%: 25%. The results of this research showed that there was significant difference in fat content (p = 0.000) and viscosity (p = 0.001) between enteral formula substitution winged bean seed flour and corn flour with standard enteral formulas hospital. Best fat content and viscosity at 50% substitution of enteral formulas seeds winged bean flour and 50% corn flour with fat content of 16.5% and a viscosity of 180 cP were able to pass through a rubber tube with a size 14 Fr and 16 Fr. Enteral formula with substitution winged bean seed flour and corn flour can be used as an alternative to enteral formulas are lactose-free.
