Abstract
Pemenuhan gizi seimbang pada anak usia sekolah memiliki peranan penting dalam perkembangan dan pertumbuhan anak. Sejak berkembangnya full-day school tren makan siang di sekolah atau school lunch mulai marak dilaksanakan di Indonesia. Dalam pelaksanaan school lunch perlu adanya evaluasi tingkat kecukupan asupan untuk mengetahui apakah school lunch telah dapat memenuhi kebutuhan siswa. Citarasa makanan dan suasana makan di sekolah merupakan beberapa diantara faktor yang mempengaruhi asupan school lunch. Tujuan penelitian ini adalah untuk mengetahui hubungan suasana makan di sekolah dan cita rasa makanan dengan asupan school lunch siswa SD. Penelitian ini merupakan jenis penelitian analitik dengan desain cross-sectional. Teknik sampling yang digunakan adalah total sampling. Pengambilan data dilakukan sebanyak tujuh kali siklus menu. Asupan school lunch siswa diukur dengan menggunakan metode plate waste, yaitu dengan menghitung prosentase sisa makanan dari school lunch yang dikonsumsi siswa. Selanjutnya siswa diminta mengisi kuisioner untuk mengidentifikasi suasana makan di sekolah dan citarasa makanan berdasarkan persepsi siswa. Hasil uji korelasi Spearman antara variabel suasana makan di sekolah dengan asupan school lunch adalah p=0.351, sedangkan antara variabel citarasa makanan dengan asupan school lunch adalah p=0.026 dan r=0.113. Hal ini menunjukkan bahwa tidak terdapat hubungan yang bermakna antara suasana makan di sekolah dengan asupan school lunch dan terdapat hubungan yang bermakna antara citarasa makanan dengan asupan school lunch.
English Abstract
Balanced nutrition in school-aged children had an important role in growth and development. Since full-day school becomes a trend, school lunch also becomes a trend in Indonesia. In the implementation of school lunch, it is necessary to have an evaluation of consumption level to know if school lunch provides balanced nutrition. Dining environment in school and food taste are several factors that affect school lunch intake. The objective of this study is to determine the correlation of dining environment in school and food taste with school lunch intake. This study type is analytic with cross sectional design. The sampling technique is total sampling. Data acquisition takes seven times in one menu cycle. The intake was measured by calculating the percentage of plate waste from the school lunch consumed by the respondents. Next, respondents are asked to fill a questionnaire to identify the dining environment in the school and the food taste based on their perceptions. The result of Spearman test between variable dining environment in school and school lunch intake is p=0.351, whereas the result between food taste and school lunch intake is p=0.026 and r=0.113. This result shows that there is no significant correlation between dining environment in school and school lunch intake, whereas there is a significant correlation between food taste and school lunch intake.
