Abstract
Usia sekolah merupakan periode emas pertumbuhan. Asupan makan siang di sekolah (school lunch) berpengaruh pada prestasi belajar dan status gizi siswa. Faktor penampilan makanan diduga turut mempengaruhi tingkat asupan makan siang. Tujuan penelitian untuk mengetahui pengaruh penampilan maka-nan terhadap tingkat asupan makan siang siswa usia 10-12 tahun di SD Plus Qurrota A’yun. Penelitian ini merupakan penelitian observasional dengan res-ponden 42 siswa. Tujuh menu dipilih secara acak dari 20 menu dalam satu kali siklus. Penampilan makanan diperoleh dengan mengisi kuisioner yang meliputi komponen warna makanan, tekstur, variasi, dan porsi. Tingkat asupan makan siang diperoleh dengan menimbang sisa makanan. Hasil penelitian menunjukkan 83,3% puas dengan warna makanan; 80,6% puas dengan tekstur makanan; 91,7% puas dengan variasi makanan; 66,7% siswa mengatakan porsi makanan cukup; 67% tingkat asupan makan siang responden dalam kategori normal. Uji statistik regresi linier (α = 0,05) didapatkan tidak ada pengaruh warna, variasi, dan porsi makanan terhadap tingkat asupan makan siang, namun menu ketiga, kelima, dan ketujuh ada pengaruh tekstur makanan terhadap tingkat asupan ma-kan siang (p = 0,020; 0,030; 0,021). Disimpulkan bahwa pada siswa SD Plus Qurrota A’yun penampilan makanan (komponen tekstur) berpengaruh pada ting-kat asupan makan siang.
English Abstract
School aged is a gold period of physic and mental growth and develop-ment. School lunch intake affects the school performance and nutritional status. Food appearance was expected to affect level of school lunch intake. The objec-tive of this study is to prove whether food appearance affects the level of school lunch intake in Qurrota A’yun elementary school’s students aged 10 – 12 years. An observational study was conducted to 42 students with 7 randomized menus. Food appearance was taken by questionnaire (color, texture, food variation, food portion). Level of school lunch intake was taken by plate waste weighing. The result indicate that 83,3% students satisfied to food color, 80,6% satisfied to food texture, 91,7% satisfied with the food variation, and 66,7% students satisfied to meal portion, 67% students was in normal level of school lunch intake. Linier re-gression result (α = 0,05) showed that there was no influence between color, var-iation, and meal portion to the level of school lunch intake, but in third, fifth, se-venth menu, indicated that food texture influence the level of school lunch intake (p = 0,020; 0,030; 0,021). So, food appearance (texture) is affect the level of school lunch intake in Qurrota A’yun elementary school’s students aged 10 – 12 years.
