Abstract
Pola makan tidak seimbang pada penderita DM tipe 2 dapat menyebabkan peningkatan kadar glukosa darah. Oleh karena itu, dibutuhkan produk olahan yang memiliki kadar tinggi protein, rendah lemak, tinggi serat, dan indeks glikemik rendah untuk memperlambat pengosongan lambung dan memperpendek waktu transit di usus. Susu kedelai adalah salah satu produk olahan susu dengan protein tinggi dan lemak rendah. Substitusi filtrat ubi jalar ungu pada susu kedelai dengan indeks glikemik rendah dan serat tinggi, diharapkan sesuai dengan kebutuhan gizi penderita DM tipe 2 serta dapat menyelesaikan salah satu keluhan klasik penderita DM tipe 2 yaitu polifagia. Penelitian ini bertujuan untuk mengetahui pengaruh substitusi filtrat ubi jalar ungu pada susu kedelai terhadap zat gizi makro sebagai alternatif diet DM tipe 2. Jenis penelitian ini adalah eksperimen murni dengan Rancangan Acak Lengkap (RAL) satu faktor dengan enam perlakuan dan empat replikasi (100%:0%, 80%:20%, 60%:40%, 40%:60%, 20%:80%, 0%:100%). Hasil penelitian menunjukkan bahwa substitusi filtrat ubi jalar ungu memberikan perbedaan yang bermakna terhadap zat gizi makro (p<0,05). Kadar protein berkisar antara 4,259-4,647 gram, kadar lemak antara 2,139-2,584 gram, kadar karbohidrat antara 5,527-6,253 gram. Kesimpulan dari penelitian ini adalah substitusi filtrat ubi jalar ungu pada susu kedelai memberikan pengaruh yang bermakna terhadap zat gizi makro.
English Abstract
Unbalanced diet in patients with type 2 diabetes may lead to increase blood glucose levels. Therefore, it takes a refined product that has high levels of protein, low fat, high fiber, and low glycemic index to slow gastric emptying and intestinal transit time shortening. Soymilk is one of the milk products with high protein and low fat. Substitution purple sweet potato filtrate on soymilk with a low glycemic index and high fiber, is expected to complete the nutritional needs of patients with type 2 diabetes and can complete one of the classic complaint of patients with type 2 diabetes, namely polyphagia. This study aims to determine the effect of substitution purple sweet potato filtrate on soymilk to the macronutrients as an alternative diet type 2 diabetes. This research is a true experimental with Completely Randomized Design with six treatments and four replications (100%:0%, 80%:20%, 60%:40%, 40%:60%, 20%:80%, 0%:100%). The results showed that the substitution of purple sweet potato filtrate gave a significant difference to the macronutrients (p<0,05). Protein levels ranged from 4,259 to 4,647 grams, fat levels between 2,139 to 2,584 grams, carbohydrate levels between 5,527 to 6,253 grams. The conclusion of this study is the substitution of purple sweet potato filtrate on soymilk provide significant effect to the macronutrients.
