Abstract
Konsumsi makanan berlemak di Indonesia tergolong tinggi sedangkan menurut anjuran WHO asupan asam lemak trans sehari adalah <1% total energi. Konfigurasi asam lemak trans lebih menyerupai asam lemak jenuh daripada asam lemak tidak jenuh. Sumber asam lemak trans yang banyak dikonsumsi adalah santan kelapa. Studi eksperimental post-test control group design dengan Rancangan Acak Lengkap (RAL) dilakukan terhadap santan kelapa yang diekstrak dari kelapa hibrida dengan perbandingan parutan kelapa dan air adalah 1:1 dengan berbagai frekuensi perebusan. Pengukuran kadar asam lemak trans menggunakan metode kromatografi kolom. Hasil analisis One Way ANOVA menunjukkan bahwa terdapat hubungan antara frekuensi perebusan dengan kadar asam lemak trans santan kelapa (p<0,05) dan hubungan tersebut dapat diprediksi dengan persamaan regresi ALT (g/100g santan kelapa) = 1,041 + (0,107 x frekuensi perebusan). Berdasarkan penelitian batas aman konsumsi santan kelapa adalah 4 kali perebusan. Kesimpulan dari penelitian ini adalah kadar asam lemak trans santan kelapa dipengaruhi oleh frekuensi perebusan dengan kenaikan 0.107 g/100g setiap kali direbus.
English Abstract
Consumption level of fatty foods in Indonesia is high, while according to WHO, trans fatty acids daily intake is <1% of total energy. Configuration of trans fatty acids is more like saturated fatty acids than unsaturated fatty acids. The source of trans fatty acids that widely consumed is coconut milk. Experimental study of post-test control group design with Completely Randomized Design (CRD) in coconut milk that is extracted from hybrid coconut, the ratio of grated coconut and water is 1:1 with a several boiling frequencies. Trans fatty acids level measurement was using Column Chromatography method. One Way ANOVA analysis results indicated the correlation between boiling frequency of coconut milk with trans fatty acids level (p <0,005) and the correlation can be predicted by the regression formula ALT (g/100g coconut milk) = 1,041 + (0,107 x boiling frequency). Based on this research safety limit of coconut milk consumption is 4 times boiling. The conclusion of this study was trans fatty acids levels was influenced by boiling frequency of coconut milk and increased 0,107 g/100g coconut milk each time its reboiled.
