Abstract
Sayuran merupakan salah satu sumber utama serat pangan bagi masyarakat Indonesia. Diet tinggi serat pangan mengakibatkan efek fisiologis yang positif dan negative, salah satu efek negative adalah ketidaktersediannya mineral untuk absorpsi, terutama mengikat mineral Fe sehingga menyebabkan penurunan absorpsi Fe. Dari beberapa perlakuan terdapat perbedaan antara absorpsi Fe dan efesiensi generasi Hb dengan perlakuan diet tinggi serat. Tujuan: Mengetahui adanya hubungan antara tingkat konsumsi makanan berserat dengan kadar Hb pada remaja putri. Penelitian ini menggunakan Study Observasional Deskriptif Analitik dengan pendekatan Cross Sectional terhadap 84 siswi yang didapatkan dengan purposive sampling . Pola konsumsi serat diperoleh melalui kuesioner semi quantitative food frequency (SQ-FFQ) . Analisis data bivariat menggunakan uji korelasi Spearman. Hasil penelitian menunjukan responden dengan tingkat konsumsi makanan berserat < 25 gr/hr sebanyak (92,9%), Kadar hemoglobin dengan kategori normal sebanyak (91,7%). Uji statistik menunjukkan tidak ada hubungan yang signifikan antara tingkat konsumsi makanan berserat dengan kadar hemoglobin, nilai p = 0,449 (p <0,05). Kesimpulan: 1) Diharapkan dapat mempertahankan menu makanan yang seimbang, berserat dan bergizi sesuai dengan kebutuhan responden, 2) Diharapkan bila memungkinkan untuk mengkonsumsi sumber Fe dari supplement.
English Abstract
Vegetables constitute one of the main sources of food for the people of Indonesia fiber. A Diet high fiber in food resulted in the physiological effects of positive and negative, negative effects is one not available for the absorption of minerals, especially mineral binding causing decreased absorption of Fe. From some treatment there is a difference between the Fe absorption and generation efficiency Hb with a diet high in fiber treatment. Objective: to know the existence of the relationship between the level of consumption of fibrous foods with Hb levels in young women. Methods: this study uses Descriptive Observational Analytic Study with Cross Sectional approach of 84 students obtained by purposive sampling. Dietary fiber is obtained through the questionnaires semi quantitative food frequency (SQ-FFQ). Data analysis using the Spearman correlation test bivariat. Results: the majority of respondents have fibrous food consumption level < 25 gr/hr as much (92,9%), hemoglobin Levels by as much as a normal category (91,7%). Statistical tests showed no significant correlation between food consumption levels with the levels of hemoglobin-count, the value of p = 0,449 (p < 0,05). Conclusion: 1) expected to maintain a balanced meal, fibrous and nutritious meals to suit the needs of respondents, 2) Expected whenever possible to consume Fe sources from the supplement.
