Abstract

Cafe merupakan salah satu industri pangan yang berkembang pesat saat ini. Usaha seperti cafe dituntut untuk melakukan beberapa strategi agar mampu menarik perhatian konsumen dengan cara memberikan kinerja dan pelayanan yang baik. Salah satu cafe yang berada di Tulungagung adalah Loodst Coffee. Loodst Coffee dalam menghadapi persaingan pada saat ini ingin melakukan pengembangan usaha dengan memperbesar kapasitasnya di lokasi yang lebih luas. Agar memiliki daya saing yang baik dalam jangka pendek maupun jangka panjang dalam pengembangan usahanya, Loodst Coffee perlu penilaian kinerja yang tepat untuk mengetahui seberapa besar pencapaian keberhasilannya. Oleh karena itu, penilaian kinerja dilakukan di Loodst Coffee. Tujuan penelitian ini adalah untuk mengetahui hasil penilaian kinerja Loodst Coffee dan memberikan rekomendasi pada Loodst Coffee. Permasalahan dapat diselesaikan dengan menggunakan metode Balanced Scorecard. Balanced Scorecard mempunyai empat perspektif, yaitu perspektif keuangan, perspektif pelanggan, perspektif proses bisnis internal serta perspektif pembelajaran dan pertumbuhan yang akan dijadikan sebagai tolak ukur dalam menentukan keputusan strategis yang mana bisa digunakan dalam jangka pendek maupun jangka panjang, serta mengetahui prioritas pengembangan kualitas kinerja yang perlu dilakukan Loodst Coffee. Responden penelitian ini sebanyak 31 orang yang merupakan jumlah total karyawan Loodst Coffee dengan periode penelitian selama 6 bulan. Pengukuran kinerja yang dilakukan di Loodst Coffee menunjukkan bahwa Loodst Coffee memiliki nilai kinerja sebesar 66,67% yang berarti kinerja Loodst Coffee termasuk dalam kategori cukup. Rekomendasi yang diberikan pada Loodst Coffee yaitu melakukan evaluasi data keuangan, meningkatkan penjualan produk, meningkatkan aktifitas pemasaran, memberikan jaminan on time delivey, survei pasar, penetapan SOP (Standard Operating Procedure) penyajian menu serta memberlakukan reward and punishment bagi karyawan. Loodst Coffee sebaiknya mempertimbangkan rekomendasi yang diberikan pada penelitian ini. Penelitian selanjutnya dapat dilakukan di Loodst Coffee di bidang auditing pada setiap perspektif Balanced Scorecard, sebab masih ada beberapa indikator pada tiap perspektif yang belum bisa menjangkau kriteria baik pada cafe sehingga cafe memiliki skor cukup dalam penilaian kinerjanya.

English Abstract

Cafe is a food industry which is growing recently. This type of business requires some strategies creation to keep the interest of the customer through good hospitality and proper performance. Loodst Coffee is one of cafe that located in Tulungagung. Loodst Coffee is doing some business development In facing competition by enlarging its location capacity. It is done as an effort for getting the good competitiveness in short and long terms and it is a goal for the developing process of the business. Loodst Coffee requires a right assessment of company performance to know the achievement of its goal. Therefore, the assessment of performance is required in Loodst Coffee. This research aimed to know the result of the assessment of performance in Loodst Coffee and also to give a further recommendation on at Loodst Coffee. The problem can be resolved by using Balanced Scorecard Method. There are four perspectives on Balance Scorecard, i.e finance perspective, customer perspective, internal business process perspective, and learning and growth perspective. The perspectives will be the baseline of strategic decision which will use on the short-long term. And to know the priority of performance quality development. Respondents of this research were 31 of the employee of Loodst Coffee and the research was conducted in 6 months. The assessment of work performance was in Loodst Coffee showed the level of work performance was 66.67% and it was categorized as enough. The recommendations for Loodst Coffee were developing of finance data evaluation, increasing of marketing activity, giving insurance of on time delivery, market survey, determining of SOP (Standard Operating Procedure) of serving the menu, and establishment of reward and punishment for the employees. Loodst Coffee should consider some recommendations as the result of this research. Further research in Loodst Coffee can be conducted on audit process of every perspective inside it, because some indicators on each perspective were still far from good criteria so that cafe will have enough score on its performance.
