Abstract
Kualitas produk merupakan salah satu faktor yang diperhatikan oleh konsumen dalam membeli suatu produk. Produk yang dapat diterima konsumen adalah produk yang sesuai dengan kebutuhan dan keinginan konsumen dengan tingkat kecacatan produk seminimal mungkin. Pabrik Gula Pesantren Baru merupakan pabrik gula yang berada di bawah kendali PTPN X yang memproduksi gula kristal dan tetes. PG Pesantren Baru pada tahun 2015 juga memulai memproduksi gula GKP 1 yang memiliki ICUMSA 81-200 IU. Terdapat kendala produksi pada beberapa stasiun sehingga nilai target ICUMSA gula GKP 1 ini tidak terpenuhi. Menurut PTPN X (2016) menyebutkan bahwa kurang lebih 10 - 20% gula GKP 1 setiap gilingnya di lebur kembali dikarenakan tidak memenuhi SNI. Penelitian ini bertujuan untuk mengetahui sistem manajemen mutu yang diterapkan oleh PG Pesantren Baru, menganalisis efektifitas produksi dengan dengan pengurangan produk cacat pada gula GKP 1 dan merumuskan langkah yang perlu diambil untuk meningkatkan mutu gula GKP 1. Metode penentuan lokasi penelitian dilakukan secara purposive, yaitu di PTPN X Pabrik Gula Pesantren Baru Kecamatan Kediri, Kota Kediri, Jawa Timur. Penelitian dilakukan pada tanggal 17 Desember sampai 27 Januari 2018. Penelitian ini menggunakan teknik accidental sampling untuk penentuan responden yang terdiri dari konsumen dan penentuan responden yang menjadi key informant dengan teknik purposive sampling. Konsumen yang menjadi responden adalah perusahaan yang memenangkan lelang gula kristal putih (GKP) 1 PTPN X Pabrik Gula Pesantren Baru dan mengambil gula GKP 1 PTPN X PG Pesantren Baru pada tanggal 17 Desember 2017 sampai 27 Januari 2018. Key informant adalah manajer pengolahan, manajer instalasi dan manajer quality assurance. Metode analisis data adalah analisis deskriptif untuk menjelaskan sitem manajemen mutu yang diterapkan dan metode six sigma yang terdiri dari 4 tahap ii yaitu define, measure, analyze dan improve untuk mengetahui level sigma dan usulan perbaikan. Alat analisis yang digunakan adalah SOP, diagram flow process, diagram IPO, diagram pareto dan diagram fishbone. Hasil penelitian antara lain sistem manajemen mutu yang diterapkan oleh PTPN X PG Pesantren Baru adalah SNI 3140:2010. Sedangkan SOP (Standart Operating Procedure) proses produksi sesuai dengan ISO 9001:2008 meliputi parameter operasional. Hasil produksi gula GKP 1 sebanyak 60469.60 kwintal dan 22193.68 kwintal gula mengalami kecacatan. Jenis kecacatan yang memiliki jumlah terbanyak adalah cacat pada ICUMSA >200 IU. DPMO rata-rata untuk PTPN X PG Pesantren Baru adalah 188395.90, dimana yang berarti kesempatan produk cacat sebanyak 188395.90 per satu juta unit produksi. Rata-rata final yield untuk proses produksi gula GKP 1 PTPN X PG Pesantren Baru adalah 62,32%. Sehingga dari DPMO dan final yield didapatkan level sigma sebesar 2,7 yang merupakan level sigma rata-rata Indonesia. Hal ini menunjukkan bahwa efektivitas penggunaan biaya pengendalian kualitas atau COPQ (Cost of Poor Quality) yang diambil dari hasil penjualan sebesar >40%. Oleh karena itu, perlu dilakukan peningkatan mutu dengan memperbaiki stasiun puteran, memperbaiki stasiun masakan, memperbaiki proses produksi sesuai dengan ISO 9001:2008, melakukan sosialisasi dan evaluasi terhadap kinerja pekerja.
English Abstract
roduct quality is a factor that is considered by consumers in buying a product. Products acceptable to consumers are products that suit the needs and desires of consumers with the level of product defects to a minimum. The New Pesantren Sugar Factory is a sugar factory under the control of PTPN X that produces sugar crystals and drops. PG Pesantren Baru in 2015 also started producing sugar GKP 1 which has ICUMSA 81-200 IU. There are production constraints on some stations so that the target value of ICUMSA sugar GKP 1 is not met. According to PTPN X (2016) mentioned that approximately 10-20% of sugar GKP 1 each milled in melting again due to not meet the SNI. This study aims to determine the quality management system implemented by PG Pesantren Baru, analyze the effectiveness of production with the reduction of defective products on sugar GKP 1 and formulate the steps that need to be taken to improve the quality of sugar GKP 1. The method of determining the location of the research was done purposively, namely in PTPN X Sugar Factory of Pesantren Baru Kediri District, Kediri City, East Java. The study was conducted on December 17 to January 27, 2018. This study uses accidental sampling technique for determining the respondents consisting of consumers and the determination of respondents who became key informant with purposive sampling technique. Consumers who become respondents are companies that won the white crystal sugar auction (GKP) 1 PTPN X Sugar Factory New Pesantren and take sugar GKP 1 PTPN X PG Pesantren Baru on December 17, 2017 until January 27, 2018. Key informant is a processing manager, installation manager and quality assurance manager. The method of data analysis is descriptive analysis to explain the quality management system applied and the six sigma method consisting of 4 stages that is define, measure, analyze and improve to know sigma level and proposed improvement. ivyaitu define, measure, analyze dan improveThe analysis tools used are SOP, flow process diagram, IPO diagram, pareto diagram and fishbone diagram. The production of GKP 1 sugar is 60469.60 quintals and 22193.68 of sugar quintals are defective. Kind of product defect that has the most number is defect in ICUMSA> 200 IU. The average DPMO for PTPN X PG Pesantren Baru is 188395.90, which means a defective product opportunity of 188395.90 per one million units of production. The final average yield for sugar production process of GKP 1 PTPN X PG Pesantren Baru is 62.32%. So from the DPMO and final yield obtained sigma level of 2.7 which is the average sigma level of Indonesia. This indicates that the effectiveness of the use of quality control cost or COPQ (Cost of Poor Quality) taken from the sale of> 40%. Therefore, it is necessary to improve the quality by improving the station, repairing the cooking stations, improving the production process in accordance with ISO 9001: 2008, socializing and evaluating the worker's performance.
