Abstract

PT. Cheil Jedang Indonesia merupakan perusahaan penanaman modal asing asal Korea Selatan yang memproduksi Monosodium Glutamat (MSG). MSG merupakan salah satu jenis bahan tambahan pangan yang dapat menyebabkan rasa gurih. Analisa sensori perlu dilakukan untuk menjaga kualitas mutu produk. Analisa sensori di PT. Cheil Jedang Indonesia sudah diterapkan meliputi kenampakan visual MSG dan aroma MSG namun perlu dilakukan analisa sensori mengenai rasa MSG. Pada industri pangan analisa sensori metode RATA (Rate-All-That-Apply) dilakukan oleh panelis konsumen yang terdiri dari 30 - 100 karyawan perusahaan. Tujuan penelitian ini adalah untuk mengetahui atribut sensori produk MSG di PT. Cheil Jedang Indonesia. Metode penelitian diantaranya seleksi panelis dan pengujaian metode RATA (Rate-All-That-Apply) untuk mengentahui atribut sensori MSG. Data yang diperoleh diolah menggunakan program Minitab 17.

English Abstract

PT. Cheil Jedang Indonesia is a foreign investment company from South Korea that produces Monosodium Glutamate (MSG). MSG is one type of food additive that can cause savory taste. Sensory analysis needs to be done to maintain the quality of product quality. Sensory analysis at PT. Cheil Jedang Indonesia has been applied to include visual appearance of MSG and MSG aroma but sensory analysis of MSG flavor is necessary. In the food industry, RATA (Rate-All-That-Apply) sensory analysis is performed by consumer panelists consisting of 30 to 100 company employees. The purpose of this study was to determine the sensory attributes of MSG products in PT. Cheil Jedang Indonesia. Research methods include panelist selection and RATA (Rate-All-That-Apply) testing to identify the MSG sensory attributes. The data obtained is processed using Minitab 17 program.
