Abstract
Keripik apel merupakan suatu produk agroindustri yang enak, renyah, tahan lama, praktis, serta mudah dibawa dan disimpan (Sukardi dkk., 2011). Hal ini termasuk upaya agar apel dapat bertahan lama dengan memertahankan nilai gizi serta meningkatkan nilai jual/tambah. Salah satu perusahaan produksi keripik apel adalah UD Harum Manis Kota Wisata Batu yang berdiri sejak 2003 silam. Proses pengemasan merupakan salah satu titik batas kendali kualitas. Beberapa permasalahan dalam proses pengemasan keripik apel diantaranya fungsi label tidak dapat mewakili daya tarik konsumen, kebocoran kemasan, kemasan tidak tersegel rapat, rendahnya kualitas bahan pengemas, kesesuaian produk dengan jenis kemasan, pencetakan label tidak rata, kinerja operator berbeda-beda, dan kurangnya pengawasan. Tujuan penelitian ini adalah untuk mengidentifikasi, menentukan urutan prioritas risiko berdasarkan tingkat keparahan kegagalan, frekuensi kejadian, dan kemampuan deteksi, dan menentukan rekomendasi strategi mitigasi/respon risiko pada proses pengemasan keripik apel guna mengurangi terjadinya risiko pada proses pengemasan keripik apel. Penelitian ini dilakukan menggunakan metode Failure Mode and Effect Analysis (FMEA) sebagai alat penilaian terhadap risiko diatas dan Analytical Hierarchy Process (AHP) sebagai alat dalam pembobotan alternatif strategi mitigasi/respon risiko secara hirarki. Berdasarkan permasalahan diatas diperoleh hasil pemeringkatan nilai prioritas risiko masing-masing variabel yaitu kemasan tidak tersegel rapat dan kinerja operator berbeda-beda. Berdasarkan nilai prioritas risiko tersebut dirumuskan alternatif strategi mitigasi/respon risiko yaitu training pekerja menjalin kemitraan, dan peningkatan vii i akses informasi. Hasil akhir perhitungan nilai bobot (weights’) kepentingan tertinggi dimulai dari tenaga kerja, dan pada alternatif strategi mitigasi/respon risiko dimulai dari training pekerja, menjalin kemitraan, dan peningkatan akses informasi. Harapannya adalah UD Harum Manis Kota Wisata Batu dapat melaksanakan usulan strategi mitigasi terhadap risiko kegagalan pada proses pengemasan, sehingga risiko tersebut dapat diminimasi untuk kelancaran proses produksi khususnya proses pengemasan.
English Abstract
Apple chips is an excellent, crisp, durable, practical, easy to carry, and store product (Sukardi et al., 2011). It includes efforts to keep apples lasting longer by maintaining the nutritional value and increasing the selling/adding value. One of the production company of apple chips is UD Harum Manis Kota Wisata Batu which is established since 2003. The packaging process is one of the control points of quality. There were eight problems of the process of packing apple chips as follows the labeling function, it does not attract the consumers interest, uneven label printing, non-sealed packaging, packaging leakage, product suitability with packaging type, low-quality packaging materials, different operator performance, and lack of supervision. This study aimed to identify the various risks, to determine the order of priority risk from severity, occurrence, and detection, and to purpose an alternative risk mitigation strategies of packaging process This research conducted using Failure Mode and Effect Analysis (FMEA) method as the assessment for the problems above and Analytical Hierarchy Process (AHP) method as an instrument in hierarchical risk mitigation strategies. Based on the problems above, it obtained the rank of the results of the risk priority value of each variable that is non-sealed packaging and operator performance varies. Besides the risk priority value is formulated alternative risk mitigation strategies that were training workers’ to establish partnerships, and increased access to information. The result of calculation from the highest value of interest weights’ is labour, and in each alternative mitigation strategy were training workers’, partnership, and increased access to information. The suggestion for UD Harum Manis Kota Wisata Batu, they may implement the proposed mitigation x strategy against the risk of failure in the packaging process, so that risk can be minimized for the smoothness of the production process, especially the packaging process.
